This New Year’s Eve, Skirt at W Singapore Sentosa Cove is offering four- and five-course menus that display the virtuoso technique of its grill masters. Among the highlights of the menu is the torched beef tongue in a tuna and anchovy dressing, as well as a dry-aged rainbow trout with confit leeks and smoked mussels. Steak, of course, is a must here, so look out for the beef short rib that’s served with a black garlic purée, potato terrine, charred onion, and jus. 

At 15 Stamford, a five-course dinner heralds the start of the new year. Highlights include Canadian lobster in a crustacean broth, as well as a Murray Bridge lamb served with poivrade artichokes, and a Japanese Wagyu striploin with sweetbread and black truffle. Guests also get access to the rooftop countdown party with a complimentary glass of champagne, making the new year extra special in the historic building of the Capitol Kempinski Hotel.

For a change of scene, trade fireworks and skylines for waterfront views of the Straits of Johor at Canopy Changi Village this New Year’s Eve. From 6pm, a live band will serenade you until midnight strikes, as you tuck into festive specials like buttered Norwegian salmon and pumpkin and berry-smoked duck.

If you love grill-kissed cuts, Origin Grill is the right spot to celebrate the end of the year. On December 31, Origin Grill’s six-course dinner offers premium highlights like Tsarskaya oysters, and a succulent Rangers Valley cross-bred Wagyu beef tenderloin MBS 7+. Coming with a glass of Veuve Clicquot champagne, this is an excellent place to herald the new year in style.

Start your new year on the right foot at Braci. On New Year’s Eve, the one-Michelin-starred restaurant is offering a five-course tasting menu for its first seating, and a seven-course tasting menu for its second. It’s an explosion of Italian flavour—look out for the scampi in Parmigiano dashi graced with Alba white truffle shavings, or the pappardelle dish made with Amalfi lemon, Colatura di Alici (a type of fish sauce) and Oscietra caviar.

At Skai, executive chef Seumas Smith will present a four-course lunch and a six-course dinner on New Year’s Eve. For lunch, you’ll find fine dishes like Miyazaki A4 sirloin and chicken liver and foie gras parfait, but for dinner, expect to be impressed with dishes like Brittany blue lobster pithiver with basil and ginger, as well as a barbecue king crab. 

Dining at the Singapore Flyer has returned with 165 Sky Dining, and it is better than ever with three thirty-minute rotations, a five-course menu from December 30 to January 1, and spectacular views of the fireworks at Marina Bay. Expect exceptional food crafted by chef Wyvin Yap and petits-fours crafted by Janice Wong. On New Year’s Eve, the celebration is even more special with Singapore Flyer’s New Year’s Eve countdown champagne special, with a glass of premium champagne, a party kit, and more chocolate bonbons by Janice Wong.

Fancy starting the new year in an elegant Japanese garden? Head down to Keyaki at Pan Pacific Singapore, which is offering an eight-course set menu from December 31 to January 2. Deep-fried delights like snow crab and tofu await you, as does a grilled lobster in a spicy cod roe sauce. For extra festive cheer, book your table for New Year’s Eve, where you can join in the Kagami Biraki, or the sake barrel breaking ceremony, accompanied with a complimentary glass of sake.

New Year’s Eve at Altro Zafferano is set to be a glamorous affair as the rooftop restaurant offers a decadent gala dinner. Sip on aperitivos on the Terrace Lounge to the tunes of a live DJ before heading back in for delicacies like Boston lobster tail with sweet white corn and trout roe, or scampi with turbot and sea urchin. Don’t forget dessert, made of Italian Gianduiotto chocolate, infused with champagne, and touched with gold and truffle.

The ideal New Year’s Eve celebration is at Vue, perched on the rooftop of OUE Bayfront where you can get a full view of the fireworks on December 31. Be treated to a glass of Pol Roger “Sir Winston Churchill” 2015 champagne once you arrive before sitting down to a six-course New Year’s Eve dinner accompanied by Dom Pérignon champagne. Indulge in executive chef Sam Chin’s creations such as the blue lobster on a creamy potato pave, topped with Queen Kaluga caviar, or the signature A5 Kumamoto black Wagyu sirloin. When you’re done, make sure to head out onto the terrace with a drink in hand to ring in the new year.

Leave it to Chinese executive chef Cheung Siu Kong to deliver a power-packed New Year’s Eve and Day menu. At one-Michelin-starred Summer Pavilion, five courses of Chinese gastronomy delicately prepared will be served, including a poached Canadian lobster soup, pan-fried lamb chop with black truffle and a braised Inaniwa noodle with South African abalone. 

New Year’s Eve is a spectacle at Cut by Wolfgang Puck, which is offering a four-course menu with exquisite plates. Take, for instance, the king crab leg gratin topped with kaluga caviar and chives which makes for an excellent starter, and a selection of premium Wagyu cuts from Japan, Australia, and the United States. 

The party continues on New Year’s Day with a three-course lunch menu, starring iconic dishes like the big eye tuna tartare with wasabi aioli, a jumbo lump crab cake, and the classic New York cheesecake with strawberry gelato. 

Put on your best Venetian masks for Level33’s masquerade party on New Year’s Eve to ring in the new year in style. A five-course dinner awaits, with special dishes like Australian kingfish tartare with Level33’s very own brut beer jelly and Siberian caviar, or the king crab and Japanese uni risotto, and the 48-hour Westholme Wagyu served with shavings of Périgord truffle.

Keep the bottles flowing by opting for the countdown drinks package, which offers free-flow beverages from 10pm till the fireworks at the strike of 12, and a glass of Barons de Rothschild champagne at midnight.

Located on the 40th floor of the Capitagreen building, Artemis Grill offers the perfect spot to see the fireworks on New Year’s Eve. The four-course menu for the occasion is hearty and moreish, with sun-dried tomato focaccia rubbing shoulders with grilled Maine lobster. Make sure to choose a main from the New Year’s Eve specials like the F1 Wagyu tenderloin, served with an apple purée for a dash of sweetness. Or go for the Ibérico pork loin, which is exquisitely tender atop a bed of caramelised squash purée. 

Long a favourite hotspot for celebrations, head down to Spago by Wolfgang Puck for a four-course menu to herald the New Year. For starters, you can expect a Hokkaido scallop and hamachi ceviche dressed in yuzu-perfumed soy sauce, before choosing from a selection of eight mains like the lobster pot pie with winter vegetables and French black truffles, or the pan-seared sea bream on a laksa curried coconut broth. Offering a panoramic view of the fireworks on New Year’s Eve on the rooftop of Marina Bay Sands, this is one of the best ways to welcome 2024. 

Five courses of sumptuous Cantonese fare awaits you at 5 on 25 on New Year’s Eve and Day. For dinner, you can expect delicacies such as double-boiled lobster broth, as well as a wok-fried Kagoshima beef sirloin that is deliciously tender. It’s best enjoyed with 5 on 25’s signature tea, snow chrysanthemum and Anxi Royal Tie Guan Yin. 

On New Year’s Eve and Day, this steakhouse is pulling out all the stops. 665ºF’s New Year four-course menu features premium ingredients cooked with creative technique, like the Korean Wando abalone risotto and the Tokachi herb-fed striploin, aged for 14 days with kombu. Wild strawberries infused with St Germain champagne make for a simple but stunning dessert. Vegetarians, you won’t be left out either with delicacies like smoked parsnip panna cotta and applewood-smoked sunchoke.
