This dish is steeped in a tangy and flavoursome broth and served with spent grain focaccia. Equally comforting are the toasted barley broth enhanced with the addition of sweet peas, turnip and celtuce, and the deliciously charcoal-grilled New Zealand lamb chops whose slightly gamey taste is offset by the stout-infused pickled onions and perfectly reduced savoury lamb jus.
