1. Mosella

Located on the forest terrace of the hotel is Mosella, the Mediterranean and Peruvian restaurant that has been making waves in the F&B scene since its opening in June. It continues to do the same this Christmas, as the culinary team has prepared an indulgent three-course lunch and dinner menu (four courses for dinner on Christmas Eve and Christmas Day) available from November 27 to December 31. Bring an appetite and begin the feast with an indulgent appetiser of carpaccio de gamba (carabinero prawn carpaccio), as well as other refreshing bites like the ceviche de conchas, Hokkaido scallops bathed in a zesty citrus dressing. For the mains, don’t miss the beef Rossini, fork-tender grass-fed beef tenderloin MB5, served with foie gras and a port wine sauce; and cochinillo asado, the iconic Spanish suckling pig which is best had with calvados purée and pork jus.

For extra festive cheer, go for the à la carte brunch on Christmas Day or New Year’s Day instead. Mediterranean and Peruvian flavours blend seamlessly in dishes like the gazpacho de melon, 48-month Ibérico ham, and Amelie Fine de Claire oysters n3 elevated with pisco sour foam and wafu sauce. Of course, NZ lamb chops are irresistible with Peruvian red pepper miso, as are the chicken skewers served with chimichurri and harissa oil.

Desserts, of course, could be some of the most highly anticipated dishes of the festive season, and here you’ll get to sink your teeth into exquisite mont blancs, dazzling with swirls of chestnut chantilly, marron glacé and spiced ganache. Chocolate and gianduja, an Italian chocolate spread, shines in another dessert with hazelnut feuilletine.

2. Florette

It’s hardly Christmas in Singapore without afternoon tea, and at Florette you’ll find intricately-crafted desserts shaped like trees, baubles and gifts from November 28 to January 8. The black forest Christmas ball is a luscious treat with Guanaja 70 per cent dark chocolate and morello cherry confit, while the Reindeer entices with its dark rum and raisin bavarois and Caraïbe 66 per cent chocolate mousse. The spread isn’t complete without savouries, so save some space for an exquisite set of sandwiches embedded with luxurious lobster and caviar, eggs with black truffle, and cream cheese and smoked salmon.

Don’t miss out on Florette’s new lineup of festive cocktails either. Available from December 1 to January 8 are exclusive festive concoctions crafted in partnership with The Macallan. “The Night in Red” puts a spin on the classic old fashioned with mulled wine, The Macallan whisky, angostura bitters and orange zest, while the “Eclecticity” mixes Macallan whisky with toasted apple syrup and Midori. But for more familiar Christmas flavours, go for “The Light in Amber”, which infuses festive spices, lemon, and orange blossom, with whisky, champagne, and orange bitter liqueur. For a truly fun night out, go for an optional top-up for free-flow Taittinger champagne, or free-flow prosecco, festive cocktails, red and white wine, and sodas from $88++ per person for 2.5 hours.

Being a champagne and oyster bar, make sure to come down for Florette’s oyster tasting platter. Drop by between December 1 to 30 and feast on a variety of oysters such as Hyogo, Irish, Jerome Miet, L’Antilope, and Tsarskaya oysters, which are best enjoyed with champagne and bar bites. Proceed to explore the jewels of the sea with the Mediterranean seafood stew casserole, a sharing dish brimming with lobster, scallops, sea bass, and tiger prawn.

Bring the party home with Pan Pacific Orchard’s selection of festive takeaways. Warm, hearty and grand are just some apt adjectives to describe its lineup of roasts, including a whole roasted US tom turkey with chestnut stuffing, and a Black Angus beef tenderloin fragrant with mixed herbs. Gammon ham is given an extra flavour boost with a chipotle and Manuka honey glaze before it is served with a cinnamon pork gravy and apple sauce for a unique blend of savoury and sweet. Sides are not to be forgotten, with stunners like the potato au gratin with truffle essence and manchego cheese, or the seafood lobster bisque infused with cognac and fresh tarragon for a complex fragrance.

Round off your feast with the hotel’s selection of log cakes, which come playfully and beautifully decorated. Fronting the festive selection is Santa’s Belt, a creation enveloping chocolate almond sponge with white peach and cherry blossom mousse, along with mascarpone crémeux and pistachio feuilletine. The cocoa and strawberry log cake is sure to please too, with its pillowy vanilla chiffon sponge uplifted by coconut and lime ganache and strawberry chantilly cream.
