These 16 industry leaders joined the Tatler Dining editorial team in voting for the restaurants and award-winners in The Tatler Dining Guide 2023
Every year, Tatler Dining releases an annual publication that catalogues the top restaurants in the Philippines, including special awards and recognitions for the best of the best: The Tatler Dining Guide. In addition to the Tatler editorial team, these restaurants are selected by the panel, comprised of industry leaders and food authorities who aid in vetting, nominating, and voting for the restaurants and special awards featured in the yearly guide.

1. Angelo Comsti

Author, food consultant, journalist, cook... these are just some hats Angelo Comsti is known to wear. Yet, the respected figure still found the time to open a restaurant, Mōdan, with his business partner, chef Jorge Mendez.

As the founder of Margarita Forés Concepts, and Asia’s Best Female Chef 2016, she is the mastermind behind restaurants like Cibo, Grace Park, Lusso, and The Loggia, as well as her famed catering company Cibo di Marghi.

4. Monica and AJ Garcia

As co-founders of Don Papa Rum and Santa Ana Gin, this husband and wife power couple are responsible for bringing proudly local brands to an international stage.

5. Jaclyn Clemente Koppe

6. Jojo Madrid

He is the managing partner of Premium Wine Exchange and is truly someone who lives and breathes what he does for a living. As a wine enthusiast and collector, he has become a revered expert in the industry.

7. Abba Napa

As the co-founder and creative director of The Moment Group, this woman is a visionary who has successfully helped guide the company towards where it is today: a juggernaut enterprise with tried and tested brands across the Philippines.

8. Marga Nograles

Wife, mother, and entrepreneur are some of the many hats that Marga Nograles dons proudly. She is the founder of Kaayo, a fashion label and currently has her hands full as the chief operating officer of the tourism promotions board of the Philippines where she aims to revitalise the industry.

9. David Ong

David Ong is the co-founder, managing partner, and bar manager of coffee and cocktail concepts in Manila, Philippines namely: The Curator Coffee & Cocktails, OTO, EDSA Beverage Design Group, #YKWRoaster at The Grid, and PourHouse Hospitality.

10. Happy Ongpauco-Tiu

She is the founder of The Happy Concept Group, a chef, influencer, and restaurateur. This multi-hyphenate not only runs restaurants but also creates some of the most beautiful catering experiences and tablescapes.

11. Charles Paw

Charles Paw, restaurateur extraordinaire, is CEO of the Tasteless Food Group which handles the likes of The Grid food hall, Pizza Express, Your Local, and Tsukemen to name a few. On top of his F&B empire, he is also a partner at Hydra, and president of Digital Walker and Beyond The Box.

16. Kim Yao

Kim Yao co-founded CloudEats which eschews physical restaurants and focuses on its plethora of in-house brands and customised kitchens on delivery. Established in May 2019, the company has thrived, opening more test kitchens and concepts.
