The anticipated opening of Baia, a rooftop dining lounge bar by acclaimed chef Beppe De Vito’s ilLido Group, adds to the stunning Marina Bay skyline atop Esplanade Mall. Named after the ancient Roman resort city beloved by aristocrats, Baia captures that same spirit of luxury and leisure. The slick rooftop oasis is licked with maroon, gold, and green tones, exuding an effortlessly warm and chic feel. But as the sun sets and the beat drops, the atmospheric space transforms into a high-energy nightlife destination with live DJs set on every Wednesday and the weekend. The cocktail menu is equally stunning, where creative tipples serve as the perfect accompaniment to your next sunset.

Drink Refreshing aperitivos like the vibrant and citrusy Strombolian or bold concoctions like the rich espresso-martini-esque Eclipse

Perched up 34 floors high atop Labrador Tower, promising jaw-dropping panoramic views of Singapore’s harbour and city skyline, is 1-Alfaro. Inspired by the lighthouses of Italy’s Emilia-Romagna region, also known as Alfaro, the rooftop dining concept boasts two experiences: La Torre, an exuberant Italian restaurant where you can savour delicious meals from breakfast to dinner with stunning views; and La Luna, a vibrant rooftop bar perfect for lively evenings. At the latter, craft cocktails are designed as tributes to notable figures from Emilia-Romagna, such as Ferrari founder Enzo Ferrari and architect-painter Giacomo Anziani.

Drink Nothing beats a playfully effervescent number like the Enzo Ferrari, where fruity prosecco and lambrusco are lifted with sage. Otherwise, stick to classics such as the negroni or the garibaldi.

Poolside dining meets serious gastronomy at The Roof at The Singapore Edition. The space takes elevated dining quite literally with chilli crab spring rolls; sambal octopus with charred pomelo and yoghurt; and an umami-packed Tokyo-Seoul smashed burger, flavoured by gochujang, miso black garlic aioli, and furikake. But cocktails are not an afterthought, as no pool party is complete without a slew of refreshing libations, such as frozen margaritas and citrusy palomas, to accompany the sunset hour.

Drink A refreshing start begins with the zesty Pomelo Paloma accented with lime, or indulge in a decadent Frozen Mango Hazelnut Margarita for a sweet treat.

Hit the rooftop for Pullman Singapore Hill Street's flagship swim-up bar where it is viva la fiesta at any time of day. Translating to “cool” in Spanish, El Chido certainly lives up to its name. Drink Sunset Boulevard is an elegant champagne cocktail that is both sweet and floral; Sombrero Smash is a fresh and herbaceous gin-based tipple tailored for those with a penchant for fresh basil and citrus; and the Martini Express is a tamarind-spiked coffee martini that will surely awaken the tastebuds.
