Singapore’s first rooftop spritz bar and restaurant offers an inspired menu and innovative cocktails that make for a memorable dining experience

Vue is Singapore’s first rooftop spritz bar and restaurant that ticks all those boxes. Perched on the 19th floor of OUE Bayfront, it offers the right vantage point that is not too high or low, which lets you fully appreciate the beauty of the Marina Bay vista.

Park yourself first at the al fresco bar and indulge in the specially-curated menu of premium cold cuts—Jambon de Bayonne (Basque-style ham), Jamon Paleta (front leg) and Jamon Iberico (back leg) from Spain, where the best jamon come from. Feeling peckish? The menu also includes a variety of cheeses available as add-ons to the charcuterie board; light bites such as boneless buffalo wings and charcoal-grilled mushrooms; and Tokyo-style sandos for something heavier, in case you plan to stay at the bar throughout the evening.

The delectable eats are complemented by the bar team’s creative cocktails that are made for Singapore’s hot and humid climate. Their speciality is spritz with a range of options like Basil Spritz, a refreshing medley of dry gin, basil and lemon, and Aperol Spritz, a classic combo of Aperol, prosecco and soda. But of course, the repertoire has classic options such as negroni, as well as innovative concoctions such as St. Petersburg. The latter is a potent but delicious mix of Rekya vodka, St. Germain elderflower liqueur and ginger beer.

Continue your memorable dining experience in the main dining room, decked out in a dramatic cathedral-like copper ceiling and glass walls that frame the picturesque view of Marina Bay.

Veteran executive chef Sam Chin helms the kitchen and presents an ever-changing menu that shines the spotlight on specially-sourced ingredients and peak-of-season harvest. “I personally hand-pick every component that goes into every dish served at Vue,” he explains, adding that his dishes highlight the origin and purity of the ingredients.

Ready your appetite for the delicious dishes to come—ocean-fresh Norwegian King crab on toast; Norwegian hand-dived scallops presented au gratin with cave-aged gruyere de grotte; and Kokuou A5 Wagyu grilled over binchotan. There’s an extensive wine list too, with over 1,000 bottles comprising popular champagne brands, well-known reds and whites, and even back vintage wines.
