Easily the most buzz-worthy place to be right now in downtown Singapore is the new Pullman Singapore Hill Street. Aside from the train travel-inspired luxury stays, the five-star hotel is now home to three exciting dining concepts that are as diverse and intriguing as the melting pot. With Singapore being an indisputable foodie hub with gastronomic experiences aplenty, and the new year fast approaching, these novel dining concepts geared up with an exhilarating galore of programs, from decadent high teas and lavish buffet brunches to rousing get-togethers.

New York is definitely in the house. Inspired by Pullman’s American origins, the vibrant day-to-night night dining concept is an elevated reimagination of America’s best delis in the heart of Singapore. Like the city, the energy at Madison’s is palpable but of course, the highlights are the voluptuous sandwiches that draw the most attention. Sink your teeth into the world-famous Reuben with flavoursome heaps of corned beef and buttery emmental cheese contrasted with zingy sauerkraut. There’s also a playful take on the Jewish Lox classic paired with seaweed cream cheese and vined tomatoes.

Don’t leave your appetite at home. Portions are generous, as evinced by the stately Empire State burger, which comes packing an all-American combination of Angus beef, smoked salmon, smoked pepper jack cheese and an oozing fried sunny side up. Expect hearty bagels layered with streaky bacon, spam and avocados, whimsical eggs benny croissants with smoked salmon, and, of course, towering stacks of fluffy buttermilk pancakes. The deli also serves up international buffet breakfast and Sunday brunch. Merging the best of east and west, brunch at Madison's offers a live carving station with roasted turkey and glazed gammon ham, a charcuterie section with artisanal cheese and signature sandwiches from Madison’s. Diners can also tuck into Japanese delights from Moga ranging from fresh sashimi to tempura, sushi rolls, a seafood bar with lobster and a hot section for unlimited small plates. Craving a decadent experience? The Signature Dilmah Afternoon Tea promises just that with a delectable spread of sweet and savoury light bites served in a chest of drawers, and paired with premium Dilmah tea.

For busy hustlers in the vicinity, Madison’s Grab & Go is a takeaway section dedicated to dishing out delectable nosh such as sandwiches and muffins for the time-crunched. The joint has also partnered up with homegrown brands such as local coffee authority Sarnies to serve up fresh brews.

Hit the rooftop for Pullman’s flagship swim-up bar where it is viva la fiesta at any time of day. Translating to “cool” in Spanish, El Chido certainly lives up to its name. Its infinity pool and dining area are open to the public—making it a chic hangout spot for romance and conviviality. Whether you’re enjoying an afternoon tan by the cabanas or lounging about the plush communal sofas under the sun, the vibrantly decorated space boasts stunning views of the cityscape and Marina Bay. The playful theme evokes a dreamy coastal vacation in Mexico and the same could be said for the eight thematic cocktails designed by award-winning mixologist Dario Knox.

Here, classic tipples are reconstructed with Mexican flair: Sunset Boulevard is an elegant champagne cocktail that delivers sweet and floral expressions at first clink; Sombrero Smash is a fresh and herbaceous gin-based tipple tailored for those with a penchant for fresh basil and citrus; and the Martini Express is a tamarind spiked coffee martini that will surely awake the tastebuds. To remedy the hunger pangs, especially after a dip in the pool, there is a sumptuous range of
Mexican fare such as shrimp & chorizo tacos, tostadas and nachos to be enjoyed.

Moga

Slide past the unassuming wooden door and you might just be transported to the alleyways of Tokyo. There lies Moga, an emphatic amalgam between speakeasies from the Prohibition Era and izakayas from 1920s Japan. The modern Japanese concept is rebelliously evocative as it brandishes its flashy interiors decked out with dazzling LED lights, larger-than-life pop art plastering the walls and an open kitchen counter. Matching the energy are sophisticated craft cocktails and inventive sharing plates that feature modern interpretations of izakaya classics such as the Moga samurai roll and crispy kakuni pork belly.

Aside from a wall of Japanese whiskies and sakes, there are Japanese-inspired cocktails carefully crafted by Moga's team of mixologists and bartenders, comprising head mixologist Marcus Liow, as well as Jasper Tan and Jay Shin. For lighter expressions, opt for the Hana Sour, a sake-based tipple with elderflower and citrus notes, or the Geisha’s Garden where gin is paired with matcha, jasmine and vanilla. Need a perk-me-up instead? Revel in the smoky Karaita, a mezcal and tequila-based drink with a kiss of togarashi spice.

On December 31, usher in the year 2024 with two adults-only countdown parties at Pullman Singapore Hill Street.

At El Chido, get ready for undisturbed views of the breathtaking fireworks alongside a back-to-back groove of tunes that promises to escalate deeper into the night. Expect attractive bottle promotions and thematic cactus shot trays to fuel highs. Over at Moga, the boisterous company of nostalgic tunes, good booze and New-Years-Eve-only food exclusives are kept indoors as you bid sayonara to the year 2023.

And on January 1, double down and keep the celebratory spirits alive with a sumptuous hangover brunch where diners can look forward to a combination of both Madison’s and Moga’s signatures over free-flowing mimosas. Talk about starting the year off right.
