Christmas is just a few weeks away, which means it is time to plan your holiday meals. If you are staying in Singapore, indulge in sumptuous classics exclusively created for this period—think Angus steak with truffle purée, pan-seared scallops with pumpkin and brandy fruit cake. It’s a showcase of classic and contemporary fare—the likes of Hokkaido scallops bathed in a parsnip purée; Acquerello (rice) risotto beautified with chunks of smoked eel; and roasted red snapper. Brasserie Les Saveurs executive chef Thibault Chiumenti’s buffet menu begins with freshly-shucked oysters and pan-seared foie gras. The briny marine creatures whet the appetite for the holiday roasts—beef Wellington, roasted turkey and honey glazed gammon ham, among others.
 
Before you forget about sweets, a dessert trolley will be wheeled to your table to entice you with indulgent treats such as light-as-air cinnamon cheesecake, sweet and fruity berries violet yule log, and brandy fruit cake. 7. Hai Tien Lo

Executive chef Ben Zeng gives your festivities an oriental flare with his six-course menu. Instead of the quintessential honey glazed ham and roasted turkeys, what you’ll get are contemporary Cantonese delicacies. The spotlight is on authentic Argentinean dishes, of course, so get started with the succulent Argentinian beef tenderloin empanada. It’s a good lead-up to the highlight of the meal—the asado Argentino (Argentinian barbecue). It’s a meaty ensemble of tender and juicy corn-fed chicken, suckling pig, dry-aged Argentinian ribeye, and baked barramundi. 15. Publico Ristorante

The chefs at Publico got into the Christmas spirit by crafting a special à la carte menu, available throughout the month. Whet the appetite first with the granchio fritto, which is basically a deep-fried soft-shell crab served on a bed of radicchio Caesar salad and accented with tomato aioli and salsa verde. Another delicious offering for sharing is the pizza boscaiola, which comprises a thin and fluffy crust laden with house-made porchetta, porcini mushrooms and mozzarella. Finished with grated parmesan and red wine glaze for good measure.

In need of more meat? The entrée of manzo arrosto is a beautifully grilled Angus beef tenderloin with sides of crisp purple potato, bell pepper tartare and spicy horseradish salsa. Dessert is a novel version of the traditional tiramisu, served in family-sized portions. Book here.
