1. Pickle Dining
Kuala Lumpur City Centre
Pickle Dining has quickly risen through the ranks of KL’s ever-evolving dining scene. Tucked behind an unmarked door in a Chinatown alleyway, make your journey up the stairs for a ferment-forward evening. Guided by chef Danial Thorlby’s penchant for pickling and contemporary French influences, the restaurant elevates fermentation from a preservation process to an art form.
The open kitchen concept is home to a collection of dishes bound to impress, from silken sunchoke espuma with pear compote and mangrove jack ceviche doused in coconut nuoc cham to grilled prawns with yuzu kosho and grilled sirloin served with sinfully savoury black garlic aioli.
