The week belongs to discerning gourmands who have a taste for the finer things in life. With a plethora of new menus, wine dinners and collaborations, there’s no shortage of innovative choices this week.
Take for example Level33, which is centering plant-forward gastronomy in an exclusive one-night-only menu. If you’re a fan of wine, Gemma Steakhouse and Altro Zafferano will be holding their own exclusive wine dinners traversing the terroirs of Italy and France. Over at Hashida, an exciting collaboration with Michelin-starred Nouri promises cuisine that will challenge your taste buds, while a new grill-focused menu by Wagatomo’s Masashi Asai is set to tantalise.

1. Level33

Sustainability is the word on everybody’s minds, especially for the team at Level33. With a demonstrated commitment to reducing waste, the world’s highest urban microbrewery is delivering a plant-forward dinner on July 24 curated by executive chef Jake Kowalewski and his team. An heirloom beetroot carpaccio infused with orange juice, honey, and fresh mint starts the meal off on a refreshing note, followed by a stunning main course consisting of roasted root vegetables and Manjimup truffle pavé. Ending the meal is a vegan dessert: a decadent Valrhona Amatika 46% chocolate and coconut cake. Leaning heavily on coconut for an aromatic profile, its richness is balanced by the acidity of mango and passionfruit salsa served on the side.
2. Gemma
Indulge in some of the finest Piedmontese wines at Gemma, which is teaming up with La Palazzina winery to curate a five-course wine dinner available exclusively on July 26. On this evening, you’ll find a delightful San Daniele rainbow trout served with dry-aged cuttlefish, mandarin gel and pomegranate, exquisitely paired with a sparkling Chardonnay – Levii Extra Brut Trento DOC 2018 – which prepares the palate for more indulgent dishes. Look out for Gemma’s signature Jack’s Creek Black Angus striploin, a cut with intense flavours amplified by umami bagna cauda, bone marrow jus, and rosemary sabayon. It is matched with the La Palazzina Bramaterra Riserva DOC 2008, a prized Nebbiolo red that carries its very own savouriness.
3. Hashida
Prepare for a rose-coloured gaze back to the past at Hashida, where chef-owner Kenjiro Hashida will be teaming up with chef-owner Ivan Brehm of Nouri for one night only on July 27. With an evening titled “Grow Up Young”, the chefs will be creating nostalgic dishes that have shaped each of their culinary journeys. Expect a blend of creative Japanese and global delicacies that pay respect to time-honoured traditions.
4. Altro Zafferano
Rosé is an often dismissed wine, but as the Château d’Esclans winery in Provence can attest, the pink potion possesses vast variety and intricacies that piques the curious gourmand’s palate. At Altro Zafferano on July 29, indulge in a four-course seafood wine dinner that shines the spotlight on Château d’Esclans’s rosés. A light Alaskan king crab salad with kohlrabi and lavender is paired with Château d’Esclans Whispering Angel 2022, a pale and light rosé with welcome notes of citrus acidity and rose petals. There is also the sole fish with potato fondant, served with Château d’Esclans Garrus 2021, a rosé that seduces with its elegant structure, acidity, and notes of apple, citrus, and subtle spice.
5. Wagatomo

Indulge in beloved Japanese restaurant Wagatomo’s new grill-focused menu, with its newly-appointed head chef Masashi Asai at the helm. Here, Japanese cuisine is touched by both Singaporean and international influences, which results in gems like the organic brown rice-fed chicken stuffed with uni rice – a tribute to Singapore’s classic hawker dish. Tacos make an appearance with ox tongue assembled in soft Mexican corn tortillas and dressed in shiso chimichurri. Lest you forget about dessert, don’t miss out on treats like the yuzu tart with whipped cream and vanilla ice cream.
