Singapore’s streets are set to reach a feverish pulse once more, as the Formula 1 race hits Marina Bay from September 20 to 22. The annual event, which gets the adrenaline pumping and blood racing with star-studded musical performances, parties and, of course, action-packed races, would not be complete without a display of the city’s gastronomic flair.

At the epicentre of activity, Singapore’s finest restaurants are heating up with local culinary talents collaborating with international chefs to experiment with multicultural flavours and curate dishes exclusively for the weekend. With bottomless brunches and dinners on the itinerary, revellers can fuel up with international cuisine and an exquisite array of tipples fit for the weekend’s merriment. Coupling menus with prime views of the city to match, here are the best (gustatory) pitstops to satiate your senses over the F1 weekend.

1. Level33

Witness the race at an apex point at Level33, located on the 33rd level of the Marina Bay Financial Tower. Just for the weekend, the team will set up multiple screens in the restaurant that will show the F1 races live, so diners can keep up with the action while tucking into a sumptuous feast paired with craft beers brewed in-house. From 5pm onwards, feast on the Formula 1 Indulgence Menu, with the likes of freshly shucked oysters served with Yarra Valley roe. Round off the meal with a selection of artisanal cheeses served with Tasmanian honeycomb.

2. Mott 32 Singapore

Gourmands are in for a treat at the famed Chinese restaurant, where executive chef Lam Kwong Ming will join forces with chef Lee Man Sing of Mott 32 Hong Kong to whip up a modern Cantonese feast. The quintessential xiao long bao is given an inventive twist with almond, chocolate and oolong tea flavouring, while the crispy bird’s nest and braised abalone bathed in a rich mushroom abalone sauce is enhanced with caviar.

Pair the meal with wines from Chinese winery Célèbre from the Himalayas. Or, relish in the selection of cocktails specially concocted for the season. For instance, the flavours of Ferrari are imagined with Tifosi, a gin-based cocktail complemented by pink guava purée and lemon. Other race-themed cocktails include the F40, a blend of tequila, crème de cassis and yuzu sake; Scarlet Speedway, a rosemary-infused run; and Racing Green, a fruity tequila with pear sake.

3. Cé La Vi 

Dine and jive perched high above the races on the 57th floor of Marina Bay Sands. On September 21, the iconic rooftop bar and restaurant invites guests to punctuate an exhilarating weekend with The Race Weekend Brunch, a three-course menu with free flowing Veuve Clicquot champagne

On the dinner menu, try something piquant, such as the burrata tomato salad, which features peach mustard-flavoured syrup, candied walnuts, shiso and endive. Other offerings include roasted scallops with nduja, an Italian pork sausage, beurre blanc, cauliflower, and pickled sweet mini peppers. 

Other specialities include black pepper tiger prawns seasoned with lime and charcoal oil, a perfect blend befitting for a race. Finish the meal with a standout dessert, like the Balinese chocolate cake with fermented strawberry and feuilletine.

Take a break from the weekend’s buzz with funky music and sushi at Sushi Samba, located on level 52 of  Capital Tower. This restaurant not only offers stunning, unobstructed views of the entire city, but is also a melting pot of cuisine from Japan, Brazil and Peru. From the à la carte menu, diners can order the Samba Singapore, a roll consisting of Maine lobster, mango, avocado, soy paper, and aji honey truffle. Other options include The Royal, a roll with Japanese A5 Wagyu, cucumber, baby asparagus, avocado, barbecue miso and kataifi. 

Round off the experience with tipples, such as Ryū’s Legend, a mystical mix of sake, Ketel One vodka, passion fruit, ginger, sancho pepper, unveiled theatrically under a jar of liquid nitrogen smoke. Non-alcoholic drinks are also an option, such as the Dancing Passion, a fruity, spicy concoction of Sancho cordial, passion fruit, ginger and sencha tea.

Formula 1 attendees looking to catch their breath after a night’s festivities can find respite in the peaceful and picturesque at 1-Flowerhill on Sentosa Island. The hilltop chateau houses a floral sanctuary where diners can unwind. Feast on the Speed & Splendour High Tea Set available at Wildseed Café located within the chateau.

Rempapa by MasterChef Singapore’s Damian D’Silva and his team are also collaborating with 1-Flowerhill to serve up his signature kuehs. From September 13 to 22, guests can visit any of the three Wildseed Cafés, also located at The Alkaff Mansion (Telok Blangah Hill Park) and The Summerhouse (Seletar), for race-themed specials and activities for kids.

6. Edge

Families can fuel up with the bottomless Pit Stop Brunch at Pan Pacific Singapore. On September 21 and 22, sip on a free flow of Taittinger Brut Réserve Champagne and other tipples including Bloody Mary and Aperol Spritz cocktails.  An equivocally dazzling array awaits at the buffet counter, with local and international offerings such as the signature Edge Nyonya laksa, Japanese sashimi and assorted sushi & maki with Norwegian salmon, maguro & tako, and hand-stretched Neapolitan sourdough pizza.  

Come back for seconds on September 22, as the buffet restaurant introduces a Sunday Brunch Special, with more options added to the spread, among which are the pan-fried foie gras escalope with fig & peach compote and Hokkaido scallop with citrus espuma.

Culinary stardom will fill the kitchen for one evening on September 19 as celebrity chef Wolfgang Puck will team up with local star Mano Thevar to whip up a degustation menu that unites their Western and Indian cuisines. The exquisite experience includes a pairing of Puck’s premium steaks with a selection of wines.  

From Indian cuisine, Thevar presents an heirloom baby tomato chaat, a dish featuring tomatoes paired with spiced buttermilk, coriander chutney and crisp masala crackers. Other intercontinental delicacies include a grilled Jeju abalone, which combines tender abalone accentuated by raw mango chutney. Carnivores can also get their fix with a Stone Axe Wagyu with yuzu kosho butter, Ibérico pork chop with apple pear moustarda, and Kinross Station lamb with cucumber mint raita.
