Chef de cuisine Nathan Griffin has introduced new menus featuring masterful creations made from a selection of premium ingredients. Dig into new dishes like the Hokkaido scallops beautifully seared in aromatic smoked butter. It sits on a fragrant Thai-inspired broth made with kaffir lime, lemongrass, chilli, coriander and ginger. For mains, opt for the wild caught pink snapper, a firm white fish grilled until charred. It’s finished with a smooth sweetcorn puree, curried velouté and wild rice. Save room for dessert and end the meal with the Milky Origin, a sweet vanilla milk pudding topped with crispy milk foam and drizzled with Manuka honey.
