The feast begins with the juicy golden prawns, fried until beautifully golden brown and accompanied by a fiery Thai chilli sauce. It’s followed by sharing portions of kow pad khi kem, a traditional salted egg yolk fried rice crowned with perfectly cooked egg; and gaeng raweng nuea. The latter is an aromatic dry Thai green curry served with fork-tender Wagyu beef short ribs. 6. Saint Pierre

Head to this French restaurant and savour its seven-course dinner menu while admiring its view of Marina Bay on Valentine’s Day. Curated by chef-owner Emmanuel Stroobant, the menu starts with a nori powder-infused tartlet filled with a creamy celeriac mousse and blanketed with luxurious N25 aged caviar. It whets the palate for the dishes to come; these include the dover sole, butter roasted until flaky and accompanied by cauliflower cream and cauliflower crudite. The fish is bathed in an aromatic ginger and mushroom-scented coconut broth. Another highlight is the Pyrenees lamb saddle. Stroobant’s take on the classic lamb en croute, this dish sees the tender Pyrenees milk-fed lamb loin layered with wild mushroom duxelles and seaweed. It’s encased in a Sichuan pepper-spiced crust and roasted until beautifully brown.
