Lavo

After a major renovation, Italian-American restaurant Lavo has reopened just in time for the Formula 1 festivities. The refreshed space and coastal Italian-inspired menu bring lighter, brighter flavours. Start with delicious antipasti like the red prawn ceviche and grilled octopus, then move on to hearty pasta dishes such as the fusilloni frutti di mare and mafaldine seafood alfredo. The burrata and black truffle pizzas are also great for sharing if you still have room.

The updated food menu is complemented by a strong cocktail list inspired by coastal Italy, as well as high-energy music that extends well into the evening.

For those who want the glamour of Formula 1 without the clamour of the crowds, Altro Zafferano offers an exclusive vantage point from the 43rd floor of the Ocean Financial Centre. Head down on October 4 for its lavish F1 brunch buffet to fuel up for the weekend. As a true Italian restaurant, the 24-month aged parmigiano, pistachio mortadella, and burrata Pugliese from the artisanal cheese and salami selection are a must-try. Don’t forget to load up on carbs with delectable options like the orecchiette with Sicilian Pesto, stracciatella, and basil. The main event, of course, is the beef costata served with grilled seafood and seasonal vegetables. You can also top up to enjoy the brunch with free-flow cocktails.

Sushisamba

There’s no better way to start the Formula 1 weekend than with a lavish brunch, and Sushisamba delivers with its free-flow ‘Race to Samba’ party brunch. Feast on October 4 or 5 and indulge in a slew of Japanese, Peruvian and Brazilian dishes from the robata grill, ceviche and sushi stations, and dessert spread. Enjoy favourites like negitoro, lobster rolls, and sashimi from the Japanese section, but be sure to save space for the mushroom and pork anticuchos from the robata station. For a sugar rush, stop by the live dessert station for burnt cheesecake, caramelised pineapple and apple crumble.

What sets this brunch apart are the beverage packages, which come in different tiers: Copacabana, Premio, Luxo and Fortuna. Each category includes a sommelier’s selection of red and white wines, cocktails and spirits. For example, the Premio tier includes free-flow Taittinger, Comtes de Champagne, and Blanc de Blancs 2013, while Fortuna offers a limited-edition champagne series, including the Dom Pérignon Jean-Michel Basquiat Special Edition 2015.

Craft beers, delicious food and a bird’s-eye view of the race track—what more could you ask for to kick off the F1 weekend? At Level33, executive chef Jake Kowaleski creates dishes that incorporate beer-brewing elements, from infusing them with house-brewed craft beers to using ingredients and techniques from the brewing process.

The Weekender menu is worth checking out, with a variety of dishes from the raw bar, grill, and signature roasts. The freshly shucked oysters are quite special, served with an acerbic mignonette sauce imbued with the blond lager. You also have the signature dry-aged Westholme Wagyu—cooked to your desired doneness and served with your choice of sauce. We always recommend the red wine and stout jus, which perfectly complements the beefy flavours. Don’t forget to pair your meal with a beer. The refreshing blond lager or wheat beer is perfect for Singapore’s hot and humid weather.

If you dine at Spago Dining Room during Formula 1 weekend, you might catch a glimpse of celebrity chef-owner Wolfgang Puck, a known Grand Prix enthusiast. Beyond the star-spotting, you’ll indulge in his exceptional Californian cuisine, which showcases bold, cosmopolitan flavours—a culinary tribute to California’s globally influenced dining scene.

Signature creations include the big eye tuna tartare cones, sea bream “laksa,” and “kaya toast” elevated with foie gras-espresso mousse. Other standouts include the Japanese-influenced honey miso broiled black cod and the USDA prime corn-fed ribeye (600g), a sumptuous sharing plate served with Spago's famous cheesy, lusciously stretchy aligot potatoes. As if the exceptional cuisine weren't enough, diners can also enjoy a spectacular bird's-eye view of the race track, making every meal a front-row seat to the Formula 1 action.

Town Restaurant

Before you head to the Formula 1 circuit, fuel up at Town Restaurant, situated at The Fullerton Hotel Singapore. Its weekend buffet spread, aptly called Fuel Up Brunch, is not for the faint of heart with its extensive selection of Asian and Western fare.

The seafood section is always a great start, brimming with poached Boston lobsters, Alaskan king crab legs and scallops. Be sure to save some room for the signatures. The laksa is highly recommended for its perfectly balanced broth and generous toppings of clams, scallops, fish cakes and bean sprouts. The soup of the day is also a must-try, with options ranging from smoked salmon chowder to Szechuan hot and sour soup. What about the specials? There’s always the soy-glazed lamb shank with Asian chimichurri sauce to balance the gaminess, or the sea bass cooked in herb and lime. The brunch comes with free-flow champagne, wines, beers and cocktails.

Skai

Prefer à la carte to brunch? Skai pairs its menu with an unbeatable view of Marina Bay. Enjoy the scenery as you sip on signature cocktails; we’re big fans of the Zen Radiance for its bright and refreshing flavours from the orange-infused water, champagne, and yuzu umeshu.

Then, start with small plates, featuring dishes like the Hokkaido scallop in a miso beurre blanc sauce with spring peas, and the crab cake served with cabbage slaw and citrus emulsion. For mains, the recommended Iberico pork chop goes big on meaty flavours but is balanced by the sharp cabbage and apple sauce.
