This month is off to a delicious, jam-packed start. On November 6, the city came alive with not one but three impressive international collaborations with highly sought-after restaurants: Born and Bread (Seoul), Toyo Eatery, and Inatô; Andō (Hong Kong) and Gallery by Chele; August (Jakarta) and Hapag. Adding to the thrill is chef Miko Calo, who gives guests a teaser of what’s to come with her two-month residency at Makati Shangri-La, offering a brilliant Franco-Filipino menu reflecting her personal and professional journey. At Newport World Resorts, chef Gordon Ramsay has opened his first-ever restaurant in the Philippines, Gordon Ramsay Bar & Grill—Tatler spoke with the world-famous icon about the exciting new development, here.

1. Taupe at The Balmori Suites Chef’s Table + Nostalgia tasting menu

Location: The Balmori Suites, Rockwell Center, Makati City

Chef Francis Tolentino takes his fine dining concept, Taupe to The Balmori Suites until December 1, introducing an exclusive à la carte menu you can only find at Balmori. Tolentino’s newly launched sophomore tasting menu, Nostalgia is also available at the pop-up every Wednesday night, by reservations only.

2. Bar Mogano

Location: Scout Alcaraz Street, Quezon City

Tucked within Narra Bistro and Cafe in Quezon City in Bar Mogano, a quaint Italian bar offering espresso martinis, spritzes, and other tipples both traditional and contemporary. Open from Wednesdays to Sundays, 5pm onwards, Bar Mogano is also home to a trove of Italian snacks including calamari fritti, marinated olives, baked brie and crostini, and even a burrata pizzette.

3. Papillon: Afternoon Tea

Location: Tordesillas Street, Salcedo Village, Makati City

Papillon, the newest concept by Lampara’s chefs RJ Ramos and Alphonte Sotero, introduces a fresh and exciting afternoon tea experience inspired by the vibrant flavours of Southeast Asia. Savour their thoughtfully curated selection of teas alongside treats sweet and savoury, all crafted in-house.

4. Automat Atbp. with chef Chris Lansang

Location: Karrivin Plaza, Pasong Tamo Extension, Makati City

Chefs Stephan Duhesme and Arlo Gregorio host the third installation of their collaboration series, Automat Atbp, featuring up-and-coming chef Chris Lansang. It’s somewhat of a homecoming for Lansang, who recently worked with the pair at their fine dining restaurant, Metiz. Since departing the restaurant, Lansang has not wasted a beat; just last month, he took over Toka Wine for their highly-anticipated #WillHost series, putting his unique blend of Japanese, Nordic, and Filipino-Chinese influences on centre stage.

For this collaboration, dubbed Nomikai (drinking party), expect a festive showcase of modern izakaya and Manileño fare, plus plenty of playful drinks to go around. Join in on the fun on November 17, 5pm at Automat.

Tatler Trivia: In addition to Metiz, Lansang’s resume boasts heavy hitters such as Florilège and Frantzén.

5. Sala Martinez

Location: Shangri-La Plaza Mall, Ortigas Center, Mandaluyong City

Chef Luis Martinez and the Nikkei Group unveil the newest addition to their growing portfolio, Sala Martinez: an extension of  BGC’s Terraza Martinez with the same homey, welcoming feel, plus plenty of new dishes to love. “With Sala [Martinez], we aim to focus on more classic dishes from Spain,” reveals chef Martinez. “However, we do not want to overlook innovation, which is why we are committed to the curing of fish and meats that will soon become part of our new menu items.”

He continues: “Sala Martínez features 50 per cent new dishes, all inspired by Spanish and Mediterranean themes.” Discover these exciting new additions like grilled pig’s ear, cachopo, and sea urchin and scallops tartare at Sala Martinez, open from Sunday to Saturday, 11am to 11pm starting November 8.

6. Harlan + Holden Coffee x Lágrima

Location: 28th Street corner 3rd Avenue, BGC, Taguig City

Harlan + Holden Coffee teams up with homegrown LA-style taqueria Lágrima to present an avocado-filled collaboration menu at the café’s BGC flagship store. Swing by to try out their avo potato “toastada”, avo chicken tacos, and avo Caesar sandwich, available until January 9, 2025 only.

Tatler Trivia: Lágrima has also opened up shop at Public Eatery, Robinsons Magnolia in Quezon City.

7. Rebel Bakehouse x Del Unión: Rebel Unión

Location: The Podium Mall, Ortigas Center, Mandaluyong City

What do you get when two cult favourites come together for one exciting pop-up? Introducing Rebel Unión, a limited-run collaboration by Rebel Bakehouse and Del Unión at The Podium Mall until November 30. To celebrate the team-up, they’ve even crafted a special pastry exclusively available at the pop-up: the drunk orxata flan, infused with coffee liqueur.

8. Good Morning Wines Wine Lounge at Apéro Neo Bistro

Location: Corinthian Hills Clubhouse, Temple Drive, Quezon City

Good Morning Wines continues to expand with a new, cosy wine lounge at Apéro Neo Bistro, bringing you a curated collection of Japanese and French wines, plus Japanese-inspired dishes to complete the experience. Thirsty for more? They’ve also got signature cocktails and mocktails, too.

Tatler Trivia: Opened in July 2024, Good Morning Wines’ shop in Salcedo Village is the first and only wine shop dedicated exclusively to Japanese wines in Southeast Asia, and possibly even the first outside of Japan.

9. Project Vino Reserve

Location: Proscenium Retail Row, Rockwell Center, Makati City

10. Kása Palma: New tasting menu

Location: Palma Street, Poblacion, Makati City

Indulge in the best of the Philippines Seas with Kása Palma’s new 10-course tasting menu. For their sophomore degustation, chef Aaron Isip turns his attention to fish and seafood, as well as seasonal tropical fruits and tuber vegetables. Keep an eye out for Balai Palma favourites, as well as all-new creations such as the young corn kinilaw, stone fish in clam paupiette, and a generous seafood platter called Halo-Halo del Mar.

11. Senju: Omakase with chef Yusuke Hino

Location: Edsa Shangri-La, Ortigas Center, Mandaluyong City

Chef Yusuke Hino, former executive Japanese chef of Edsa Shangri-La, has officially signed on for an omakase series at the beloved Senju Japanese restaurant, which continues to be a family favourite for sushi, teppanyaki, and more in the bustling neighbourhood. Catch chef Hino back in action at Senju this November 15 to 17 and December 13 to 15 as he kicks off the series with a 12-course dinner, and stay tuned as the hotel announces more takeovers, soon.

12. 10 Years of 12/10: A celebratory feast

Location: 8 Rockwell, Rockwell Center, Makati City

Since their days on Guijo St, 12/10’s Thea de Rivera and Gab Bustos have won over hearts and palettes with their modern izakaya fare, impressive cocktails, and wonderful service. On November 9, they celebrate 10 years of 12/10 (albeit, at its swanky new 8 Rockwell home) with a one-night-only 6-course menu and limited-edition 12/10 yamahai junmai sake to boot. 

13. Hapag: Western Visayas tasting menu

Location: The Balmori Suites, Rockwell Center, Makati City

Fresh off an immersive adventure throughout Western Visayas, Hapag’s chefs Thirdy Dolatre and John Kevin “Nav” Navoa put forth a brand new tasting menu inspired by the region’s rich culinary heritage. Take your taste buds on a journey from Iloilo to Bacolod with their takes on batchoy, inasal, and other famed dishes given a brilliant Hapag spin.

14. Super Natural Wine x Bibio

Location: Don Pedro Street, Poblacion, Makati City

Super Natural Wine heads to Bibio wine bar in Poblacion to showcase its range of premium Gut Oggau wines from Burgenland, Austria. Through a guided wine flight, you’ll be introduced to Gut Oggau’s diverse “family” of pours, each with its own name, personality, and backstory, including Josephine: the Blaufrankisch-Roesler blend who is “always willing to please” and is the second wife of Timotheus, their Grüner Veltliner-Pinot Blanc blend. Gear up for a fun, playful tasting, made even more festive with a spread of Bibio’s new dishes like chicken isol, cacio e pepe balls, and more.

15. Mrs. Saldo’s x Good Morning Wines

Location: Karrivin Plaza, Pasong Tamo Extension, Makati City

Chef Rhea Rizzo of Mrs. Saldo’s joins forces with Good Morning Wines to present a 5-course Japanese wine dinner at the Oppein Showroom, Karrivin Plaza. While rooted in French techniques and a Californian approach, Rizzo has long demonstrated an appreciation for global flavours—a passion that shines in each of her menus. For this collaboration, expect dishes accented with Japanese flair, complemented by wines from the Yamanashi and Yamagata prefectures.

Tatler Tip: Can’t make it that night? You need not go far for a taste of Mrs. Saldo’s—chef Rhea Rizzo’s pop-up at the Oppein Showroom is currently ongoing, slated to run until January 2025.

16. Terra Madre Visayas

Location: Bacolod City

Together with the City of Bacolod, Slow Food Negros hosts the second annual Terra Madre Visayas this November 19-23, with a calendar filled with riveting talks, immersive activities, and delicious food tastings that promote the values of the Slow Food Movement. Head to their socials to browse their line-up, featuring the Roots Siargao crew, chef Don Baldosano (Linamnam), chef and food authority Angelo Comti, Ken Alonso (Proudly Promdi), and Lokalpedia’s John Sherwin Felix.

17. Kása Palma x Waterside Solaire

Location: Solaire Resort Entertainment City, Parañaque City

Chef Aaron Isip brings his Kàsa Palma flair to Solaire Resort for one night only, collaborating with chef Alfred Santiago of Waterside to create one sumptuous feast centred over the firewood grill. Sample delicious Kàsa Palma hits including Isip’s signature lechon de lobster, fork-tender 36-hour beef short ribs in peanut sauce, and off-menu grilled tupig with smoked Nomad caviar and tinapa mascarpone, while discovering inspired dishes by chef Santiago like pinangat-style crab sausage with smoked gata and the Waterside bombe with coconut, toasted rice, calamansi, langka, and espaspol.
