Chef Miko Calo brings further excitement to Makati Shangri-La, Manila with the Avec collaboration series starring chefs Nicco Santos, Quenee Vilar, Aaron Isip, Josh Boutwood, and Margarita Forés
Every Monday starting today, November 18 until December 9, chef Miko Calo enlists some of the city’s top culinary talents for one-night-only collaborations at the historic Makati Shangri-La, Manila hotel. “I’ve been lucky to work with some of the best people in the restaurant industry, and I’m even more grateful to count many of them as friends,” shares Calo. “Since I’m here doing this residency at the Makati Shangri-La, I thought, why not bring them along for the ride?” she continues.
Playfully dubbed the Avec series, the collaborations feature five heavy hitters in the local F&B landscape: Nicco Santos, Quenee Vilar, Aaron Isip, and Margarita Forés. Read more about this exciting lineup, promising inspired and exceptional tasting menus you won’t want to miss, below:

Above Chefs Nicco Santos and Quenee Vilar
November 18 – Nicco Santos & Quenee Vilar (Celera)
Kicking off the Avec series are Nicco Santos and Quenee Vilar, the talented chefs responsible for cult favourites such as Hey Handsome and Sambar. Most recently, Santos and Quenee won big at the Tatler Dining Awards 2024, where their contemporary Asian concept, Aurora, took home the crown for Best New Restaurant. Since their departure from Aurora last August, patrons have eagerly awaited the reveal of their new casual fine dining restaurant, Celera, set to open in 2025. Until then, get a taste of this duo’s pan-Asian flavours as they team up with chef Calo at Makati Shangri-La for one night only.

Above Chef Aaron Isip
November 25 – Aaron Isip (Kása Palma)
Boasting an award-studded resume sharpened in the kitchen of Paris, chef Aaron Isip draws inspiration from his Filipino heritage and experiences around the globe while remaining rooted in his French training—a style that deeply resonates with Calo herself. At his Poblacion restaurant Kása Palma which opened earlier this April, his vision culminates in a soulful tropical dining experience where Filipino, Latin, and Southeast Asian flavours take centre stage.

Above Chef Josh Boutwood
December 2 – Josh Boutwood (Helm, The Test Kitchen, Ember, Savage, Juniper)
While he juggles many hats, chef Josh Boutwood can most often be found in the kitchens of his four signature restaurants: The Test Kitchen, his personal culinary à la carte laboratory fuelled by experimentation; Ember, where quality ingredients are championed through simple yet precise techniques; the “pre-industrial” concept Savage re-opening at a new location soon; and his flagship fine dining destination Helm, which offers a theatrical dining experience and innovative menus inspired by everything from global street food to the epic Star Wars saga. Later this year, Boutwood is also set to introduce a brand new gin-centred concept, Juniper.

December 9 – Margarita Forés (Cibo, Grace Parking Dining, Lusso, Margarita Signature Caterer)
Chef Margarita Forés is a woman who needs no introduction. Calo closes out her Avec collaboration series with a true luminary of the Philippines’s F&B industry, the chef and restaurateur to thank for beloved establishments such as Cibo, Grace Park Dining, and Lusso. Forés is not only a pioneer of the farm-to-table movement but also a proud advocate for Filipino cuisine, taking every opportunity to showcase our heritage flavours to the global stage.
