Gather the whole family for these sumptuous feasts to celebrate Chinese New Year

Who isn’t excitedly waiting for Chinese New Year? In just a few weeks on January 29, Singapore will again be awash in red, troupes will perform deafening lion dances, and families will reunite over tables laden with New Year delicacies. Though we’ve much to look forward to, the food, often key to a successful reunion, arguably tops the list. Thankfully, chefs in Singapore have risen to the massive responsibility, delivering Chinese New Year menus that will appeal to both traditional and modern palates. With that, here are some menus to usher in the Year of the Snake.

1. Hai Tien Lo

From January 8 to February 12, executive chef Ricky Leung and his team at Hai Tien Lo set out to make your tastebuds do the lion dance. The grandeur of Chinese New Year celebrations is lavishly displayed on the dinner table: think braised South African whole abalone with truffles and textures of crispy sea cucumber; sliced crispy barbecued suckling pig adorned with caviar; deep-fried chicken wing stuffed with bird's nest, fish maw and crab meat. For dessert, the prosperous gold ingot cake isn’t just a sweet treat but edible feng shui for a toothsome boost of wealth.

2. Madame Fan

The double-boiled soup, studded with fish maw, abalone and dried scallop, promises to be extra warm and comforting, while the steamed spotted garoupa cooked with Shaoxing wine, luffa melon and cured meat makes for a standout scene-stealer.

At one-Michelin-starred Summer Pavilion, chef Cheung Siu Kong has crafted novel interpretations of Chinese New Year delicacies. Take the yu sheng, which comes with prickly sea cucumber instead of the typical salmon for a unique twist. Or the steamed vermicelli, which comes packed with ingredients such as caviar, king scallop, and crab roe. But keep an eye out for Kong’s signature dishes which pay homage to his Cantonese heritage, such as the double-boiled chicken soup with fish maw and nostoc algae, or his pen cai, gloriously packed with fish maw, abalone, sea perch and more.

This Year of the Snake, 5 on 25 dishes out edible art with an incredible side of city views.
