Artistic twists on authentic and ancient dishes from across China

Stepping through Yì by Jereme Leung’s paper flower-adorned foyer is like entering a different world—one of tasteful Chinese luxury and elegance. It’s a theme that carries through with the food, which includes showstopping presentations like the hundred-ring cucumber and poached sea whelk, drizzled beautifully with soy sauce vinaigrette. The Iberico pork roll wrap is exquisitely tender and crisp on the outside, with the perfect pairing of pickled green mango to cut through its gamey profile. The humble spinach tofu stuns with a surprising umami-packed sauce of crab meat, crab roe and shimeji mushrooms. The standout dish though, is the steamed pomfret, with an utterly soft texture and equally perfect rings of luffa melon stuffed with shrimp and fungus. For a little display of showmanship, order the poached rice with assorted seafood, where a subtle shrimp broth is poured tableside over a claypot full of rice.
