Drag Brunch at Bottega di Carna

For one afternoon only, things are about to get gaggy at the Mondrian Singapore Duxton. Gearing up for Pride Month, stylish steakhouse Bottega di Carna hatched a Lady Gaga-inspired drag brunch, orchestrated with seven formidable queens, including headliner M1ss Jade So of Drag Race Philippines fame.

Simply serving eggs Benedict to close off Mayhem week won’t cut it; the sacrosanct weekend pampers the palate with watermelon feta salad, Wagyu beef sliders, grilled sea bass with chimichurri tomato salsa, and the Bottega di Carna signature tiramisu. For the moderately thirsty and champagne guzzlers, expect a free flow of Verve Cliquot, Whispering Angel, mimosas, and sangrias to help wash it all down or perhaps encourage a strut or two.

Those who’ve exhausted Singapore’s brunch circuit, this gloriously unapologetic fusion of food, performance, and pride offers delicious redemption, one that’ll make Mother Monster herself applaud with gloved hands.

What is better than tucking into an exquisitely prepared dim sum  on a weekend? You can do just that at Michelin-starred Shisen Hanten, which reopened after a major renovation last year. It revamped its weekend brunch offerings in the spirit of Chūka Szechwan Ryori, melding the bold flavours of Szechwan cuisine with Japanese sensibilities.

In the foie gras chawanmushi, for instance, chef-owner Chen Kentaro reimagines the classic Japanese egg custard with the addition of foie gras and crab roe. While the chawanmushi is a one-time indulgence only, other signatures like the Szechwan-style poached pork dumplings; barbecued honey-glazed Hokkaido shirobuta pork char siew, and Chen’s mapo tofu with Hokkaido rice come in unlimited portions. 

There’s also an optional beverage pairing option, featuring freeflow champagnes, red and white wines, cocktails and non-alcoholic sparkling teas.

The brunch menu is available on weekends and public holidays.

Every Saturday, diners can indulge in this immersive dining experience featuring unlimited signature dishes across four set courses, live sushi and robata stations. Those who feel like splurging further can opt for one of the following champagne tiers: Pol Roger Brut Vintage 2015, Taittinger Comtes de Champagne Blanc de Blancs 2013, Dom Pérignon, and Jean-Michel Basquiat Special edition Collection 2015.

What sets this experience apart is the vibrant entertainment that captures Brazil's festive spirit. Samba dancers in feathered costumes move among guests while percussionists and DJs create an Afro-Latin soundtrack for the afternoon. Though the free-flow service ends at 3pm, the party continues with music playing until dinner service begins.

If you are looking for a reason to head to Hilton Singapore Orchard on a Sunday, how about the new Lobster & Wagyu champagne brunch from its buffet restaurant Estate? Just as the name implies, diners can tuck into an extensive spread of lobster and Wagyu dishes, prepared in a variety of ways. Highlights include the grilled rock lobster, where the crustacean is simply cooked on the grill to let the natural flavours shine, as well as the Wagyu beef brisket, which allows diners to savour the beef's exceptional marbling.

Save room for the rest of the dishes on the menu, from the classic Nyonya laksa elevated with lobster to grilled homemade sausages, ceviches prepared à la minute at the station, and an assortment of tempura prepared upon order. Top up and enjoy the meal with freeflow Collet Brut, Collet Rosé, house red and white wines, beer and mimosa.

The latest offering embodies the restaurant’s ethos that “food is a blessing”, with chef-owner Dylan Ong preparing a rustic-chic feast that balances French culinary traditions with thoughtful innovation. 

Each plate in the 10-course sharing menu  is the perfect balance of flavour and texture, with most items crafted from scratch using seasonal ingredients. These include artisanal breads with house-made dips, vibrant salads, cold cuts, and protein-forward mains like 24-hour brined crispy chicken leg with sauce supreme and seabass à la meunière. An optional oyster cart and free-flow beverage packages enhance the experience. 

Located within The Arcade @ The Capitol Kempinski, the experience will soon feature live jazz performances, creating a countryside farmhouse atmosphere in the heart of the city.
