Words like “bold”, “intense” and “fiery” are often used to describe Sichuan cuisine. But at Shisen Hanten by Chen Kentaro, the dishes are kept balanced and elegant with a Japanese sensibility. After all, Kentaro hails from a prestigious family of cooks well-known for refining Sichuan dishes in Japan. So while the fare here still features the sour, hot, sweet, aromatic, salty and some say, pungent, qualities of Sichuan food, the kitchen delivers it with finesse. The signature mapo tofu is adequately spicy and flavourful. Likewise, while the wok-fried fish with shishito peppers has a rich, tongue-numbing bite, its fresh flavour and texture are not entirely lost on the palate.
