Here are the four dishes that the iconic establishments will be serving
In the Mood for Food 2023 is just around the corner next weekend from June 23-25, 2023. This year’s Coachella-themed celebration will feature eight restaurants that have contributed greatly to the local food and beverage scene. The exciting line-up this year is as follows: Biang Biang Noodle Bar, Dáo, Fowlboys, Hijau Kuala Lumpur, Madam Kwan’s, Pablo’$, Phil’s Pizza, and Waig by Chipta11a. Each restaurant will be showcasing Malaysian flavours in a way that has not been done before.
In partnership with Sime Darby Property, the event will be held at the Kuala Lumpur Golf & Country Club (KLGCC) Piano Lounge, situated within KLGCC Resort. One of the most coveted addresses for luxury living, the resort was chosen for its unique balance between leisure, culture, nature, and sustainability.
Read on to find out more about how Dáo, Hijau Kuala Lumpur, Madam Kwan’s, and Phil’s Pizza, will be putting a Malaysian spin on soft serve, panipuri, sushi, and pizza.

Dáo's Dáo-jak

The team at Dáo pairs their creamy soy-based soft serve with spicy rojak sauce to make the Dáo-jak, a spin on the beloved rojak. Served to the side is mini angku kuih filled with red bean, mung bean paste, and black sesame.
“When we think of Malaysian food, it always brings us back to the hawker street in Ipoh where we spent most of our childhood,” Kelly Lau smiles. Dáo was founded by three siblings: Kelly, Carmen, and Joe Lau, who aimed to share their father’s taufufa recipe. “Instead of a full meal, we would often order small dishes from different stalls to combine flavours and textures.” As such, the Dáo-jak combines cold soft serve with spicy rojak sauce.
Hijau Kuala Lumpur's Cham

Hijau Kuala Lumpur presents a twist on the popular street snack panipuri. The crispy puri is filled with the restaurant's signature sambal tomat and sambal ijo, and served as part of the comforting Hakka dish, Lei Cha. Sweet turnip, tempeh, long beans, and other assorted vegetables are arranged around to create the dish, which is titled Cham.
“The elements in this dish represent all three cultures from Malaysia and come together in harmony,” explains chef Idan, founder of Hijau Kuala Lumpur.

Madam Kwan’s is putting a twist on its iconic nasi lemak with curry chicken, transforming it into sushi. Fragrant coconut rice is wrapped with Japanese cucumber and finished with acar, sambal, shrimp floss, and a quail egg. Topping the egg is a sprinkle of crispy ikan bilis.
“Nasi lemak is a dish that reminds me of my childhood, as I used to eat it every morning before school,” Mohd Zamri Ali Amat, food and beverage manager at Madam Kwan’s, reminisces. “I wanted to present the dish in a way that it could be eaten in one bite.” The single mouthful packs all the flavour of the perfect spoon of nasi lemak, and is best enjoyed with the restaurant’s signature curry chicken, served to the side.

Plant-based but packing a punch of flavour, Phil’s Pizza’s New York-style vegan pizza has a base of roasted mushrooms, peppers, cherry tomatoes, and basil, with dollops of pesto. After it is baked in the oven, the slices are drizzled generously with Lingham’s hot sauce in true Malaysian style.
“During the MCO, I discovered that putting Lingham’s Chilli Sauce on pizza tasted amazing!" enthuses Phillip Dominic, one half of Phil’s Pizza. While Lingham’s Chilli Sauce is used in Phil’s Pizza’s signature chicken-based Hot Wings pizza, the team is switching it up with a vegan option for In the Mood for Food.
