Febbrile has teamed up with Clarence Chooi, the owner of Italian hawker stall Nudedles.4, to dish out classic handmade pastas from August 17 to September 17

Mark your calendars, gourmands. Mirko Febbrile, the former chef de cuisine of Michelin-starred Italian restaurant Braci, will be collaborating with Italian pasta hawker stall Nudedles.4 for his first hawker pop-up taking place from August 17 to September 17.

“Hawker centres are welcoming spaces that are so unique to Singapore. It gathers dedicated cooks who put so much hard work into perfecting a dish, and is also a place where everyone comes together to enjoy great tasting food at affordable prices,” shares Febbrile.

In fact, he discovered Nudedles.4 through his weekly weekend tradition of grocery shopping in his neighbourhood, visiting wet markets and hawker centres. Its owner, Clarence Chooi, was a former chef at Jaan by Kirk Westaway and the now-shuttered Joël Robuchon, and the two connected over making quality pasta and making Italian cuisine accessible to everyone.

Above Four classic handmade pastas will be served at the pop-up

With this month-long pop-up, Febbrile wants to “bring comforting food from my culture” with four classic handmade pastas made with the best Italian ingredients. These are the linguine al pesto, ricotta and tomato cavatelli, rigatoni alla carbonara, and pappardelle oxtail ragu. He will also be serving a soft-serve burrata ice cream, which he created just for this event.

The pop-up event serves as a first introduction to Febbrile’s culinary philosophy before he opens his own restaurant under The Lo & Behold Group in 2023.


The hawker pop-up is located at 335 Smith Street, 02-34, Chinatown Complex. Closed on Mondays.
