Celebrating the joy and the community at a traditional grigliata, this restaurant takes classic Italian recipes and gives them a modern revamp

While Singapore’s Vaccinated Travel Lane (VTL) to Italy might have just opened on October 19, we can totally empathise if you are not willing to travel just yet due to safety or even just not wanting to deal with all the various regulations. 

However, that doesn’t mean that you need to miss out on authentic Italian experiences and food. In fact, Griglia Open Fire Italian Kitchen, the newest addition to Craig Road is bringing Italian summers right to our little island. 

Griglia is a brand-new contemporary Italian grill restaurant that is comfortably nestled on the ground floor of a conservation shophouse and celebrates the concept of an authentic grigliata (barbecue party).

Typically, guests bring along their favourite dishes to a grigliata. They will then enjoy multiple courses of food over a long afternoon while sipping some of the finest Italian wines.

The grigliata also places a heavy focus on celebrating fresh and delicious seasonal produce by cooking it over hot coals in order to bring out the flavours. 

Using traditional recipes and modern techniques, chef Andrea De Paola has artfully curated a menu that showcases the culinary essence of the grigliata with classic recipes that have been refined in a contemporary style.

Some highlights from his menu include his caciocavallo, which is a lighter rendition of the Neapolitan parmigiana and features a vegetarian antipasti that are tangy and succulent with layers of grilled eggplant, tomato and basil.

Pair this with their burratina which is a modern take on a classic dish that features thinly sliced zucchini marinated with olive oil, mint and garlic. The dish is then served on the thin and crispy tart with fresh burratina and garnished with herbs and olive oil.

When it comes to Griglia Open Fire Italian Kitchen’s mains, you can rest assured that you will not be disappointed. 

Indulge in their spaghetti di martino with seawater marinated Datterino tomatoes, featuring sweet Datterino tomatoes brined in seawater to maintain the freshness of the produce. This is one dish we guarantee will have you coming back for more. 

If you would like something heartier, their house-made pappardelle with braised pork jowl, Chianti and guanciale is a soulful dish that features tender pork jowl that has been cooked for hours in a rich Chianti reduction.

Of course, one of Open Fire Grill’s signature highlights is their irresistible selection of beef, lamb, pork and fish which is aged and brined for deeper and more complex flavours. 

Try their whole Spanish turbot or their spiced New Zealand lamb rack, cooked over thee grill and served with sides such as gratinated bone marrow with rosemary and wild garlic crumbs, cherry tomatoes with cucumber, olives and rocket salad and potatoes puree with horseradish and smoked caciocavallo.

No meal is complete without dessert and here at Open Fire Grill, the same amount of care is given to their sweet treats.

Our personal favourite is their Capri in a cake—a limoncello Caprese with Amalfi lemon and extra virgin olive oil. This light, tangy and creamy dessert is just what you need after a hearty Italian meal and we can assure you that you will be addicted. 

With their Sicilian kitchen tiles, unique negronis and delicious food, we are certain that you will feel right at home at Griglia Open Fire Italian Kitchen.
