The established chef of private dining establishment Ownself Make Chef will have three unique noodle dishes on the Raffles Courtyard menu from August 19 to September 15

If you can’t resist a hearty plate of delicious noodles, you’ll love Raffles Courtyard’s latest collaboration with chef Shen Tan. She has specially curated a menu featuring three noodle-themed fusion dishes playfully titled Make Mee Great Again, infused with Singaporean and Southeast Asian flavours and a whole lot of creativity.

Chef Shen is the self-taught chef and owner of a private dining establishment, Ownself Make Chef. She is also the latest chef to join Raffles Coutyard’s Private Chef Series which aims to feature culinary creations created by local chefs.

Her unique menu starts out with the Bee Tai Mak-velous Ulam Pesto which is a rendition of a local favourite, Bee Tai Mak. Chef Shen skillfully melds the classic Italian paste with Southeast Asian flavours to produce a delightfully fresh and flavourful meal.

The chunky ulam pesto sauce clings beautifully to thick Bee Tai Mak noodles in this dish to give diners an incredible burst of flavour with every bite. The noodles come with fresh salted egg cured barramundi and prawns which complement the noodles perfectly and is also topped with crispy and salty ikan bilis, cucumber brunoise and cherry tomatoes for extra flavour. 

You’ll want to pair this dish with Shen’s fiery and fragrant sambal belachan for a spicy kick that adds an extra layer of flavour to an already packed dish.

Ban Mee is a local favourite that many enjoy in the mornings or for a late-night supper and her rendition is no less addictive, sinful and downright delicious. 

Aptly named the SG Lard (Lao) Ban Mee Sambal Noodles, she takes thick, handmade ban mee noodles and serves it up with a runny fried egg and a heaping of lard sambal which makes it the perfect spicy dish for a night out when all you want is a hot plate of comfort food.

The noodles are complemented with coriander, fried garlic, spring onions, lardons, ikan bilis and topped with caramelised five-spice pork that will simply melt in your mouth. 

If you only have one dish from her new menu, make it this one.

No meal is complete without dessert and the chef certainly delivers on the noodle theme with a sweet treat adorably named Orh-Nee You (Sweet Wu Kok).

The dish features crispy and sweet fried taro puffs that are covered in deep-fried thin bee hoon noodles (yes, it works beautifully).

The puffs feature a decadent gula melaka centre and come served with a scoop of rich coconut ice cream that is drizzled with gula melaka butterscotch and topped with shallots.

The Raffles Courtyard x Ownself Make Chef collaboration will be available for diners to check out at the lush Raffles Courtyard from August 19 to September 15 from 3 pm to 9 pm daily. 

If you are interested in meeting the chef behind these unique creations, drop by on Tuesdays from 6 pm to 9 pm when Chef Shen will be present to meet diners.
