Audemars Piguet’s AP Café Singapore debuts its first chef collaboration with Ami Patisserie by Makoto Arami, presenting a limited-time pastry collection at Raffles Hotel Singapore that unites Swiss watchmaking heritage with Japanese-French precision in craft

The world’s first AP Café,  situated in the Bar and Billiard Room at Raffles Hotel Singapore, has introduced its inaugural chef collaboration with Ami Patisserie by award-winning chef Makoto Arami. Available from June 2 to 30, the partnership brings together haute horlogerie and Japanese-French pastry in a shared expression of precision, refinement and handcraft.

The collaboration marks a significant milestone for AP Café Singapore. It is the café’s first chef partnership since opening in 2025, underscoring Audemars Piguet’s continued expansion of its cultural universe beyond watchmaking into hospitality and experiential dining.

At its core, the collaboration reflects a meeting of two long-standing craft traditions. Audemars Piguet, founded in 1875 in Le Brassus, Switzerland, has built its reputation on generations of Swiss watchmaking savoir-faire. In parallel, Arami represents a lineage of Japanese confectionery heritage dating back to 1935 in Shiga Prefecture, a tradition he continues today through Ami Patisserie.

Trained across Japanese and French culinary disciplines, Arami has worked in acclaimed kitchens including Beige Alain Ducasse Tokyo and Dominique Ansel Bakery New York, experiences that inform his precise and restrained approach to pastry. His creations are defined by structure, seasonality and a quiet attention to detail that mirrors the discipline found in fine watchmaking.

The collaboration is anchored by Takumi Sei, a signature creation inspired by the Japanese ideals of takumi, meaning craftsmanship, and sei, representing precision and refinement. Built on a layered composition of matcha, azuki and raspberry, the dessert expresses balance through depth and clarity of flavour.

Alongside it is a curated selection of mini choux pastries that further explore contrasts in taste and texture. These include combinations such as smoked caramel coffee with hazelnut, uji matcha with kinako and white chocolate, and a berries and pistachio variation accented with vanilla kirsch cream. Each piece is designed as a precise, individual expression rather than an abundant assortment, reflecting the philosophy of controlled craftsmanship that defines both maisons.
