Audemars Piguet debuts its first-ever AP Café in the historic Bar & Billiard Room at Raffles Singapore, bringing together watch enthusiasts and food lovers

Audemars Piguet, the lauded Swiss watchmaking brand that has adorned the wrists of royalty and rebels alike, has just opened Singapore’s first AP House at the historic Raffles Singapore—making it a grand total of 22 AP Houses worldwide. While transporting visitors to Le Brassus is top of mind, what makes the Singapore outpost so special is the Garden City’s conspicuous connection with food; birthing the first-ever AP Café.

To converge both horological hedonists and culinary connoisseurs, AP Café engaged Dave Pynt of acclaimed Burnt Ends Singapore to design the menu; immersing him in Le Brassus to inspire his creations.

Expect modern European dishes, crafted with the same precision and attention to detail that goes into an intricate Audemars Piguet timepiece, with a focus on seasonal ingredients and local flavours.

Dishes here live up to claims. Starters of a luxurious golden roesti see a crisp but fluffy potato disc, painted with edible gold leaf and mirrored to the 38mm iconic watch face, as the cradle for tangy crème fraiche and shiny blobs of caviar; hand-chopped Australian Wagyu beef tartare, invigorated with fiery Sriracha, cured savoury yolks, and chives, then served with discs of crispy wanton skin and roasted king crab, perfumed with white pepper, is carefully layered into a caviar tin with creamy avocados and even more caviar.

Mains come hearty but no less refined. The smoked Scottish salmon and buckwheat crepe combination is light and fresh, while the short rib raclette pie contrasts with rustic countryside abundance. A standout is the Hainanese chicken rice-inspired club sandwich; the ultimate tip of the hat to Singapore’s heritage. Roasted chicken breast, kissed with ginger, comes moist, alongside an irresistible housemade chilli that promises to scorch the tip of your tongue.

Sweet tooths, the array of desserts is a meal in itself. Highlights include the buttery gula Melaka pain suisse, chuff with airy palm sugar custard cream; Swiss roll, lined with creme de marron and white cream, paired with crunchy honeycomb and vanilla ice cream. Coffee features the Burnt Ends Bakery’s signature Slayer’s Blend while craft cocktails, such as the clarified Singapore Sling, are designed by award-winning cocktail bar Native.

While the AP Café is open for walk-ins, the 12-seater configuration suggests that reservations are encouraged. The AP House experience, however, requires advance bookings to secure the full experience. Set to be a one-of-a-kind experience, the temple of haute horlogerie is carefully curated to showcase the brand’s commitment to craftsmanship and innovation in a refined atmosphere.
