“It has to be Olivia’s signature cheesecake. It is well balanced and oozes with creamy goodness. The rich, creamy centre is perfectly complemented by its crisp, caramelised top. “Without a doubt, Wakuda’s Basque cheesecake, and I’m not just saying this because I am the head pastry chef. I fell in love with the cheesecake from the now-defunct Platine Patisserie by Waku Ghin, where one could take away a whole cake back in the day. Today, it is served at Wakuda by the slice, making it the perfect way to end every meal. The texture is incredibly velvety, the flavour is light yet satisfying, and it is not overly rich.”
