“I won’t deny my love for the canelés we make at Odette. They are perfectly crispy on the outside, custardy on the inside, and filled with lots of Vanuatu vanilla and Diplomático rum. The best part is when it is served warm, resulting in a burst of flavour on the first bite. The love and care we put into our canelés remind us of why I fell in love with patisserie in the first place.”

“The canelé is one of my favourite confectionery from Bordeaux, France. Chef Cheryl Koh uses the best vanilla beans in the batter at Les Amis. Baked the traditional way by coating beeswax on the inside of the copper moulds, the Les Amis canelé combines a caramelised crust and a soft custardy interior. Just as good as the classics in France.”
