We ask award-winning pastry chefs in Singapore to share their go-to spots for the most satisfying financiers

Historically created to resemble gold bars in the French financial district where they were first sold, financiers rank high among the list of any discerning pastry connoisseur. Devastating in their buttery brilliance, these small almond cakes take real skill to master, and who better to ask than some of Singapore’s pastry royalty for their go-to spots?

From Esora’s Japanese-inspired creations to Pantler’s unapologetically classical approach, these are the best financiers in Singapore worthy of their weight in calories. Ready yourselves and submit to these butter-drenched treasures.

Louisa Lim, pastry chef of Odette and winner of the Best Pastry Chef award at Tatler Best Asia 2024

“A great financier should be lightly crisp on the outside, soft and buttery on the inside. It should be rich with nutty flavours; never too oily nor cloyingly sweet. Esora gets it just right, I especially love how the flavours are Japanese-inspired. My favourites are the original and the black sesame.”

Makoto Arami, chef-owner of Ami Patisserie and winner of the Best Pastry Chef award at Tatler Best Singapore 2025

“The financiers at Whitegrass stay true to classics and are my favourite. Light and moist within, perfectly crisp on the outside, incredibly fragrant, and redolent of brown butter. Simply delicious.”

Soh Hui Shan, head pastry chef of Wakuda Singapore

“The pastry stalwart makes it straightforward and no frills, allowing the quality of the butter to shine. A good financier is all about that buttery fragrance and flavour; Pantler’s version maintains its richness even after keeping it for a few days, which impresses me most.”

Janice Wong, chef-artist of 2am: Dessert Bar

“Chef Makoto Arami has always married good ingredients and flavours with his financiers—the outer crust is consistently perfect too. I especially enjoy his latest creation of the kokuto pineapple financiers, which is a classic beurre noisette almond tea cake laced with tropical fruit and Okinawan black sugar.”

Ong Ai Li, consultant pastry chef of Saint Pierre

“Before joining Saint Pierre, I tried many versions of financiers—while some were quite good, none ever quite hit the mark. Only when I tasted Saint Pierre’s version, I understood what was missing. What makes it special is a lighter, fluffier version as compared to traditional ones. One can instantly taste the richness of the brown butter, which has a smooth texture yet remains light and not greasy while incorporating fresh Japanese yuzu and sudachi to bring a vibrant burst of citrus with each bite. I always get excited for the holiday season as it will mean new festive flavours available for takeaway.”
