Previously based at The St. Regis Langkawi, Mandy Goh will now lead the talented team at ATAS

Expect fresh flavours and prime local ingredients when dining at ATAS, The RuMa Hotel and Residences' speciality restaurant that features a kitchen organically integrated into the dining space. From October 2022, Penang-born Mandy Goh will bring her expertise and seasoned palate to the eatery after hanging up her hat as executive chef at The St. Regis Langkawi.

Who has been the biggest influence on you professionally? 

My family, who I have considered my mentors since the first day I held a kitchen knife and who always provide me with guidance no matter where I am. I greatly appreciate all the advice I have received from them all these years.

What is a book/movie/show/podcast that you think every chef should read/watch/hear? 

The culinary industry has a huge amount of materials at different levels for chefs to develop their skills. Personally, I liked to study basic cooking techniques when I was a trainee to strengthen my skills. Now, I am collecting books from famous chefs and watching Netflix for cooking shows and street food!

What and where is the best restaurant you’ve ever eaten?  

Mama Food, a restaurant my late grandmother used to own, which served the best food I had ever tasted in my life.

What is your favourite food city?

I love all food from all cities. Food from different countries gives me inspiration when creating new dishes.

What is one ingredient you can’t live without? 

Citrus. I tend to add citrus as the finishing component of a dish. 

It’s your last meal—what’s on the menu?  

The dishes I miss and love the most are the fish dishes with different condiments my mum used to cook for me. Sometimes, this would be her steamed fish with dried scallops and other times it would be her deep-fried flat fish with black bean sauce. I'm hungry now!

What do you look forward to upon joining The RuMa Hotel and Residences? 

I plan to challenge myself further in Kuala Lumpur after the past three years at The St. Regis Langkawi.
