Innovative, cuisine-crossing dishes will ignite your taste buds this week

Few things are as exciting as seeing Singapore’s top chefs exercise their mastery over their craft into dishes of great artistry. You’ll be seeing exactly that as you eat your way through the unique offerings Singapore’s restaurant scene has to offer this week. 

Take a detour to the Italian country at Altro Zafferano, where its new Journey menu pays homage to the different regions of Italy. Morsels is celebrating its 10-year anniversary with an exciting new tasting menu featuring chef Petrina Loh's penchant for fermentation. And if you’re looking to challenge your palate, chef-owner Ivan Brehm of Nouri is collaborating with London-based Rafael Cagali for lunch and dinner service on May 20 for an explosive blend of innovative gastronomy.

Can’t get enough of pizza? A trip to La Bottega Enoteca is a must for its pizza omakase and wine pairing. End the week at Rumours Beach Club, where you can party the night away with its selection of Jimbaran barbecue and bespoke cocktails.

1. Altro Zafferano

A culinary exploration through the Italian peninsula is in store for you at Altro Zafferano, where executive chef Andrea De Paola and head chef Daniele La Rocca will be presenting their Journey menu, painstakingly prepared since August 2022. The menu features ultra-fresh produce in bites like the briny sea urchin curd scooped up by toasted sourdough, or the sous vide artichoke over a smoky egg yolk and generously topped with Oscietra caviar. 

A standout is the pigeon breast served medium rare, next to a roasted pigeon leg to mop up a luscious pigeon jus. A fermented shallot and pigeon liver pâté on the side adds a touch of sweetness and umami to the dish, as does an accompanying Torcolato wine-poached Nashi pear. Dessert is truly a spectacle, which includes an ancient panna cotta enriched by robiola cheese to add a slightly savoury body to the panna cotta, accompanied by fresh Kyoto strawberries and topped with a crispy pistachio tuile. Despite the elegance of the dishes here, De Paola and La Rocca’s sincerity is palpable, guaranteeing a good time at the rooftop of the Ocean Financial Centre.

2. Morsels

Local celebrity chef Petrina Loh is celebrating 10 years of her landmark restaurant Morsels with Morsels 2.0. Gone is the small plates sharing menu concept, and in its place is an eclectic Asian fusion tasting menu that shines with Loh’s love of fermentation, traditional Chinese medicine, and the balanced profiles of Japanese washōku (sweet, sour, bitter, and umami). 

Within Morsels’s rustic and eccentric interiors on Dempsey Hill, enjoy spring delights such as seasonal oysters dressed in olive gel and citron green tea kombucha vinaigrette to refresh the palate, before tucking into the Primrose Farm's pork tenderloin, served with the ‘sauce Rockefeller’ made with fresh oysters, gorgonzola dolce, cream, and drizzled with parsley oil and kumquat red cosh. The tenderloin is impossibly tender and soaks in the pungent sauce delightfully; paired with baby gem and potato pave, the palate is balanced with a touch of sweetness.

3. Nouri

Nouri’s series of four-hands dinners continue with the exciting invitation of Rafael Cagali, the executive chef of London’s two Michelin-starred Da Terra. Long-time collaborators with Nouri’s chef-owner Ivan Brehm, the Brazilian-Italian chef will be matching Brehm’s innovative cuisine touched by global influences with his own bold originality and heritage. Both have been mum on menu details, but with the combined experience at some of the world’s top restaurants, including the Fat Duck in the United Kingdom, you are in for a dining experience that will expand the possibilities of gastronomy.

4. La Bottega Enoteca

Pizza doesn’t just belong on the casual dining table. At La Bottega Enoteca, celebrate all there is that the Italian comfort food has to offer with its pizza omakase and wine pairing menu. Choose three or four savoury pizzas, like the Wagyu, featuring a fresh Wagyu tartare with robiola, Italian Stracchino cheese, fried capers for a crispy texture and slightly briny flavour. It’s paired with the Mastrojanni Rosso di Montalcino DOC, a luscious red with light tannins, a hint of balsamic and aromas of red stone fruit that goes well with the fresh bite of the tartare. A red prawn pizza is also on offer, with sea urchin, burrata, lime zest and ‘Nduja crumble for a bright and spicy hint with briny overtones. Paired with a Vie di Romans Flors di Uis Blanco Isonzo, the red prawn and sea urchin comes to life with the white’s intense orange and lychee nose, tinged with the perfume of clove. 

A dessert pizza finishes the omakase. Choose between the crema al limone, featuring lemon curd, basil, olives and pistachios with a decadent pistachio gelato, or the caprino with the funkier goat cheese with Amaretti liquor, honey, thyme, olive oil, and pine nut gelato. Paired with a saccharine Casa Gheller Spumante Aromatico Dolce dessert wine, you’ll be sure to leave with happy spirits and happier stomachs.

5. Rumours Beach Club

No weekend is complete without a fun time at the beach, and Rumours Beach Club is here to scratch that itch. Launched in 2019, Rumours Beach Club returns with holistic wellness programmes, music festivals and other unique events to have you partying your way into the night. Adding to the Bali beach vibe is its offering of authentic Jimbaran cuisine, like sumptuous Jimbaran barbecue platters featuring lobster, tiger prawns, and baby squid seasoned with baby kaffir lime. Elsewhere, you’ll find tempeh chips with an Indonesian sweet soy sauce, or a classic nasi goreng, Indonesia’s take on fried rice with fried marinated chicken and shrimp paste sambal. Don’t forget to order a cocktail from a curated drinks menu, featuring classics like margaritas and daiquiris to the La Vie en Rose, a libation blending peach and strawberry liqueur with prosecco.
