Innovative, cuisine-crossing dishes will ignite your taste buds this week
Few things are as exciting as seeing Singapore’s top chefs exercise their mastery over their craft into dishes of great artistry. You’ll be seeing exactly that as you eat your way through the unique offerings Singapore’s restaurant scene has to offer this week.
Take a detour to the Italian country at Altro Zafferano, where its new Journey menu pays homage to the different regions of Italy. Morsels is celebrating its 10-year anniversary with an exciting new tasting menu featuring chef Petrina Loh's penchant for fermentation. And if you’re looking to challenge your palate, chef-owner Ivan Brehm of Nouri is collaborating with London-based Rafael Cagali for lunch and dinner service on May 20 for an explosive blend of innovative gastronomy.
Can’t get enough of pizza? A trip to La Bottega Enoteca is a must for its pizza omakase and wine pairing. End the week at Rumours Beach Club, where you can party the night away with its selection of Jimbaran barbecue and bespoke cocktails.

1. Altro Zafferano
A culinary exploration through the Italian peninsula is in store for you at Altro Zafferano, where executive chef Andrea De Paola and head chef Daniele La Rocca will be presenting their Journey menu, painstakingly prepared since August 2022. The menu features ultra-fresh produce in bites like the briny sea urchin curd scooped up by toasted sourdough, or the sous vide artichoke over a smoky egg yolk and generously topped with Oscietra caviar.
A standout is the pigeon breast served medium rare, next to a roasted pigeon leg to mop up a luscious pigeon jus. A fermented shallot and pigeon liver pâté on the side adds a touch of sweetness and umami to the dish, as does an accompanying Torcolato wine-poached Nashi pear. Dessert is truly a spectacle, which includes an ancient panna cotta enriched by robiola cheese to add a slightly savoury body to the panna cotta, accompanied by fresh Kyoto strawberries and topped with a crispy pistachio tuile. Despite the elegance of the dishes here, De Paola and La Rocca’s sincerity is palpable, guaranteeing a good time at the rooftop of the Ocean Financial Centre.
