Considering how Ivan Brehm was the reason The Kitchen at Bacchanalia earned its first Michelin star, expectations were naturally high when he left to build his first solo venture Nouri in 2017 — a move that undoubtedly required guts and a desire to pursue his dreams. For the 34-year-old, food is a way to highlight our cultural differences and the connections that we have with one another. As such, the Brazilian chef's dishes are the result of lots of research and draw inspiration from cuisines all over the world, which he lovingly dubs "crossroads cooking". To kick things up a notch, Ivan is looking to collaborate with historians, anthropologists and archeologists to elevate his innovative approach to gastronomy.
