Chefs are welcoming the month of September with new fall menus and this week, you can anticipate new menus that put the spotlight on the season’s best bounty. Start with a trip to InterContinental Singapore’s The Lobby Lounge and look forward to a new afternoon tea spread featuring flavours of autumn. For a taste of Japan, One-Ninety Bar & Garden has introduced a new Kyoto-inspired afternoon tea spread, featuring fresh autumnal flavours. Before the week ends, head to Binary for its Sunday brunch and dig into tantalising plates that feature both Asian and Western flavours.

1. Binary

This gastro-bar has introduced its latest Sunday brunch menu, exclusively available on September 4. The menu puts the spotlight on Binary’s unique culinary approach of marrying Asian and Western flavours. Standouts include spatchcock chicken, generously marinated in herbs and roasted to achieve a gorgeously golden-brown exterior; and Iberico pluma marinated in Korean gochujang and seared until tender. 2. The Lobby Lounge

Treat yourself to a lavish afternoon tea spread at The Lobby Lounge. Curated by executive pastry chef Desmond Lee, the ‘A Blissful Autumn Indulgent’ afternoon tea set sees bite sized gems inspired by fresh produce and comforting ingredients of autumn. Start with the savouries and dig into a selection of sandwiches and quiche, including the crispy walnut bread topped with egg, tobiko caviar and affilla cress. Save room for dessert and indulge in decadent treats like the salted caramel cream with pecan maple frangipane, a dessert inspired by Lee’s favourite ingredient, pecans. 3. Sushi Sakuta

Tucked away in The Capitol Kempinski Hotel is Sushi Sakuta, a new omakase concept by chef-owner Yoshio Sakuta. Through his menu and immaculate skills, Sakuta brings out delicate flavours of seasonal ingredients, creating an alluring experience for his guests. While the menu changes on a regular basis, anticipate tantalising plates like comforting hamaguri (clam) soup; steamed abalone bathed in a creamy abalone liver sauce; and charcoal grilled kinki. 4. Akira Back

Chef de cuisine Chanik Chang now helms Akira Back and has debuted a new a la carte menu that is sure to delight. The refreshed menu offers modern Japanese dishes created with a Korean twist. Head down and dig into the likes of Futomaki and octopus crudo. The former is a new sushi roll that sees akami (tuna), salmon, shrimp, and tamago encased in fluffy Japanese rice and seaweed. The latter features thinly sliced octopus bathed in tosazu, a vinegar-based Japanese dressing. Book here.

5. One-Ninety Bar & Garden

Offering a taste of Japan is One-Ninety Bar & Garden’s latest afternoon tea set. Dreamed by Four Seasons Hotel Kyoto’s pastry chef Reiko Yokota, this elegant spread draws on Yokota’s memories from her childhood in America and culinary heritage of her hometown in Japan. Better bring your appetite, as there’s a selection of tantalising bites to savour. From the savoury menu, you have the likes of King crab chawanmushi; saikyo miso foie gras terrine; and bottarga and chive tart. Desserts are also a sweet affair with options like citrusy yuzu white chocolate bon bon; soft and pillowy Japanese strawberry mochi; and sweet kuri kinton (candied chestnut).
