Each year, the highly anticipated National Day Parade is marked by a flurry of lights illuminating the sky to the sounds of our favourite national tunes. Relish the comfort of a savoured meal as you watch the fiery lights fly through the sky above you. Restaurants sitting on Singapore’s best-placed rooftops are making the most of their views with National Day specials fit for enjoying the fireworks display. 

Over the SG60 National Day weekend, Singapore gets extra busy with people flocking to watch spots to catch a glimpse of the show. Standing by the waterfront may give you a good view, but Tatler’s idea of National Day fun involves tantalising libations and scrumptious gourmandise. Here’s where to find them.

1. Kaarla and Oumi at 1-Arden

This SG60, it’s fire on fire at Kaarla, an Australian-Japanese woodfire grill restaurant perched up on the 51st floor of CapitaSpring. Imagine mouthwatering Australian barbecue and the freshest catch against a generous backdrop of Marina Bay. Their special four-course National Day menu brings the heat with crowd-pleasers like wood-fired grilled Hokkaido scallops, brightened with fennel harvested fresh from the 1-Arden rooftop food forest, and tender grain-fed black Angus with grilled artichoke, creamy sweet potato veloute, and tamarind jus.

Alternatively, if you’re a stickler for Japanese cuisine, consider Oumi, which presents intricate plates such as a bluefin tuna in house-grown garden greens, and the luxurious seafood bouillabaisse, featuring Japanese king crab, spiny lobster, and Hokkaido scallops. Both celebratory meals are available only on July 5, 12, 19 and August 9.

2. Tong Le Private Dining

If you’re going to watch the jaw-dropping National Day pyrotechnics, you might as well do it whilst slowly rotating ten floors above the fray, champagne flute in hand and Kaluga caviar dissolving on your tongue. After all, Singapore’s diamond jubilee gives you enough of an excuse to show up and show out. From August 1 to 9, the Lion City’s sole revolving restaurant presents A Gastronomic Salute menu that mirrors our multicultural tapestry. Senior executive chef Dicky To puts his 36 years of experience on the line with creative dishes such as curry chickpea pani puri and chilli crab patties, before culminating at a wok-fried Saga Wagyu with aged vinegar sauce that delivers fireworks on the palate.

Want front row seats to the fireworks this NDP? Visit Skai on the 70th floor of the Swissôtel The Stamford and you won’t be disappointed by the panoramic views of Singapore’s cityscape. Tuck into a four-course National Day meal at this contemporary grill restaurant happening exclusively on July 19, 26, and August 9. The first course arrives lavishly, starring bluefin tuna topped with citrus, nori, avocado, and caviar. Pick between plump Hokkaido scallops or seared foie gras, before the main of Wylarah Wagyu is presented alongside maitake mushrooms, and burnt onion puree.

For the surf option, succulent black cod is paired with tomato fondue and onion jam. Sweet endings steer the indulgence into the refreshing with a strawberry yuzu dessert perfumed with mango and Madagascar vanilla. If you want to relish in the celebrations a little longer, continue your high dining at the Skai Bar, where you can enjoy signature and classic cocktails for the rest of your evening.

On the terraces of the world’s highest urban microbrewery, epic views of The Padang’s ceremonial firework display are a given, though frankly, the real show unfolds in your glasses—whether it is a crisp lager, juicy IPA, a robust stout, or even a bougie champagne brut beer. Guests will usually find Kee’s, a neo-bistro and bar headed by award-winning chef Andrew Walsh, on the first floor of this hotel. But from now till August 9, the restaurant, as well as the lounge at the rooftop infinity pool on the ninth floor, will plate up mouth-watering nosh by both Walsh and rebel chef Damian D’Silva to accompany the glittered skyline. Think dried sole-fish tempura chicken wings; Teochew ngoh hiong; seared salmon skewers with fermented soybean sauce; spicy chicken mee soto; and desserts of jackfruit, pandan, and coconut burnt caramel custard.

To wash it all down, consider a curated flight of SG60-themed cocktails, from an ice-kachang-inspired vodka-based fruity number to a zesty ginger-laced Singapore sling riff with a touch of pineapple.

Presenting the Viva SG Rooftop Set, where the returning headliner of Chicken Rice Chimichanga, featuring smoked chicken, mozzarella, and pickles, wraps Singapore’s beloved hawker classic in crispy tortilla.
