The fresh, structural take on the traditional Buddha Jumps Over the Wall pairs an unusual, crisp texture with the luxurious flavours of abalone and bird’s nest. For the main affair, the slow-cooked pork belly is a standout. Simmered in Chinese hua diao wine for 48 hours, the meat becomes exceptionally tender. The strawberry and rose cookie dessert offers a refreshing interpretation of sweets. Served in a martini glass and topped with raspberry crisps, it provides a light and floral finish to an elevated meal.
