The inaugural Tatler Dining Festival, featuring IQOS, set to take place from November 22 to 24 will play host to a lavish, viking-style brunch spread prepared by some of the city’s most sought-after pop-up chefs. Malaysia’s Longest Brunch which will be held on Sunday, November 24 from 11 am to 2 pm will take shape with a communal-style dining experience for over 100 diners driven by dishes inspired by homegrown flavours.

Fried mantou, fried egg belada salad, spring onion oil, and pickled veggies
“The dish I’m making for Malaysia’s Longest Brunch is a bit of a far-fetched version of an egg salad sandwich. The dish actually pays homage to my weekly nasi and lauk dinners at my mum’s. Some of my favourite dishes from her would be her pumpkin belada as well as her telur masak kicap so I’ve replaced the usual sandwich bread with a fried mantou bun and inside it, you have egg salad with belada and some pickled veggies to cut through the heavy flavours.”

Corn fritter served with raita & French toast, mascarpone honey, and ikura
“For Malaysia’s Longest Brunch, I’ll be doing a play on a corn fritter with house-made chilli sauce and some yoghurt dressing. The other dish will be sort of inspired by French toast so I’m doing a honey toast with a mascarpone topping and a little bit of ikura.”

“What I’ll be making for Malaysia’s Longest Brunch on November 24 would be a twist on meatloaf using otak-otak, just with an ikan bills bagna càuda sauce and some mixed ulam on top with vinaigrette and chilli oil.”

Joel Kirk
Bahulu, kombu buttercream, sesame; kuih loyang, lemon ganache, roses & lavender; tropical fruit jelly, vanilla chantilly
“The first dish will be a kuih bahulu with kombu butter. It’s a play on a savoury-sweet dessert. The second one is a kuih loyang, which I recently learned is also called achu murukku, and it’s a kuih rose—the deep-fried kuih. It’s gonna be dipped in a lemon ganache with white chocolate and sprinkled with floral notes like lavender and rose and lastly, sprinkled with sea salt. The last one which will be our centrepiece will be a jelly, a gigantic jelly, with local tropical fruits.”
