As Odette turns a decade old this year, the modern French restaurant will undergo a major facelift from September and will re-open in December of this year. During the temporary closure, chef-owner Julien Royer and team will head to Copenhagen for a culinary residency

A decade after first opening its doors at the National Gallery Singapore, Odette is hitting pause—but not for long. This September, the three-Michelin-starred restaurant will temporarily close its doors as it prepares to reemerge in December with a renewed space and sharpened identity. The move is more than a facelift; it is a reflection of chef-owner Julien Royer and his team’s evolution and their ongoing pursuit of purpose and precision.

But before the next chapter begins in Singapore, Odette is heading to Europe for the very first time.

From August 27 to September 21, Royer and his team will take up residence in Copenhagen’s Tivoli Gardens, one of the world’s oldest amusement parks and a cultural landmark in the Danish capital. There, they will cook from the Japanese Pagoda, a storied venue that has hosted modern dining luminaries such as Ana Roš (Hiša Franko) and Paco Morales (Noor). The residency—made possible with the support of Singapore Airlines—is both a creative pilgrimage and a rare chance to share Odette’s hospitality on European soil.

“Odette has always been about bringing joy to people and proving that fine dining can be as much about care as it is about craft,” Royer says. “As we turn 10, it feels like the right moment to refine and express more of what we truly believe in, and to usher in a new age of fine dining once again.”

Since its inception in 2015, Odette has become one of Asia’s most decorated restaurants. It has held three Michelin stars since 2019, and continues to dominate the region’s rankings, including Tatler Singapore’s ‘Restaurant of the Year’ accolade in 2024 and a spot in the prestigious Tatler Best 100 Restaurants.

But beyond the accolades, Odette has stood apart for its singular sense of grace—its ability to balance rigour and warmth, elegance and emotion. Over the years, Royer has invited a constellation of culinary stars into his kitchen, from Alain Passard and Dominique Crenn to Virgilio Martínez and Junghyun Park, each collaboration a reflection of shared values and mutual respect.

As the restaurant prepares for its new chapter, the months ahead gives guests the final opportunity to experience Odette as it is today.
