Explore these latest additions to the local dining scene this month

We are halfway through 2022, yet the island’s dining scene remains as vibrant. This month, the highly anticipated restaurants Nobu and Osteria Mozza have finally opened their doors, gracing us with delectable Japanese and Italian fare. For something closer to home, one-Michelin-starred chef Malcolm Lee’s latest restaurant, Pangium, offers nostalgic heritage fare.

1. Lime House Caribbean Restaurant & Bar

This Caribbean restaurant has opened its second outlet in Katong; it continues to offer a menu of traditional Caribbean dishes with an Asian twist. Come hungry and indulge in an array of tantalising dishes, including the trinida curry goat, a classic Caribbean dish made with fresh goat meat stewed until fork-tender; and jerk chicken skewers. The latter sees the chicken marinated for 24 hours before being grilled and baked until golden. It’s finished with tangy and spicy pineapple salsa. Wash these down with the Ochumare cocktail, a fruity concoction of light rum, carrot, orange, lemon and hibiscus grenadine. Book here.

2. Nobu Singapore

Nobu has officially opened its doors at Four Seasons Hotel Singapore this month. The Singapore outlet is helmed by executive chef Hideki Maeda, who shines a spotlight on celebrity chef and restauranteur Nobu Matsuhisa’s signature new-style Japanese cuisine. Options are aplenty on the extensive menu. If you are craving fish, go for the black cod miso, one of Matsuhisa’s most famed dishes comprising fork-tender black cod coated in an umami-filled glaze. While meat lovers will not want to miss out on the succulent Peruvian style ribeye steak, a gorgeous cut grilled to a beautiful char and doused in a sauce of chilli pepper, garlic and vinegar. 3. Pangium

Candlenut’s head chef and founder Malcolm Lee’s latest dining concept, Pangium, is one of the newest additions to Botanic Gardens Singapore’ enclave. The culinary team, headed by Brian Chan, takes diners on a gastronomic journey through innovative dishes that explore heritage cuisine through a contemporary lens. Dig into tantalising creations, such as the hand-minced duck satay glazed with a sweet kicap manis sauce and grilled over charcoal. It’s served with fragrant sayur lodeh (Indonesian vegetable soup) prepared with Japanese vegetables. Save room for dessert and get to savour sweet treats by pastry chef Hyeseon Ham, like ondeh ondeh, a classic kueh elevated with freshly rolled kabocha dough and filled with liquid gula Melaka. 4. Osteria Mozza

Celebrated American chef Nancy Silverton’s much-awaited Italian restaurant has finally reopened its doors at Hilton Singapore Orchard. Executive chef Peter Birks helms the kitchen, whipping up delectable Cal-Italian fare heavily influenced by its original outpost in Los Angeles. Start the meal with antipasti from its lavish mozzarella bar, featuring an impressive array of mozzarellas, burrata and Italian cured meats, before digging into mains. Go for Nancy’s Favourite Trio, a platter of creamy mozzarella di bufala, cantabrian anchovies, semi-dried tomato and aromatic cruschi peppers with fett’unta (grilled garlic bread). It whets the appetite for what’s more to come—among these are the Cencioni pasta complete with juicy Dungeness crab and saffron, and Cacciucco. The latter is a traditional fish stew from Tuscany that brims with locally sourced seafood, like juicy mussels, red prawns and grouper. Book here

5. Restaurant Born

The folks who brought Path and Wakanui Grill Dining to Singapore’s dining scene are set to open this new restaurant on June 21. The menu is curated by executive chef Zor Tan and offers contemporary delights that marry French gastronomy with Chinese flavours. Served as part of the degustation menu are the likes of bincho-grilled pigeon breast and leg. It’s served alongside grains of chicken stock-cooked barley, pearl corn, sunflower seeds and tomatoes. The dish is finished with a garnish of cosmos petals, adding a pop of colour.
