Marriott Hotel Manila executive chef Meik Brammer has said, “We wanted to introduce something new to our guests [and] make interesting dishes out of lesser-known cuts while helping minimise waste of meat products.”
Brammer himself is chair of the sustainable culinary committee of I Love Earth, a concerted initiative of hotels within Newport World Resorts toward sustainable operations.
