At GAKU Teppanyaki, the only upscale Japanese restaurant within the Hoiana Resort & Spa, the sizzling grills become the story of culinary artistry, where sophistication and hospitality are elevated to deliver a truly sublime dining experience.
Teppan Masters
High-end restaurants are typically associated with closed kitchens, where dishes are prepared "secretly" and only presented when everything is perfect. However, the art of Teppanyaki offers the opposite. All the skillful transformations of the ingredients unfold right before the customer's eyes. There, the chef is not just a cook, but also a performing artist and storyteller.
Located within Hoiana Resort & Golf, GAKU Teppanyaki is a high-end Japanese Teppanyaki restaurant. Featured in Tatler Best 2026's Spotlights, GAKU demonstrates class through a consistent philosophy – from its culinary style and service spirit to its contemporary ambiance that sets the stage for unforgettable dining experiences. GAKU's uniqueness lies not in individual dishes, but in its entirety as a destination that any diner would want to try at least once in their lifetime.

The art of teppanyaki grilling has always demanded precision and a high level of technical expertise. But at GAKU, this art is further enhanced by the skillful presentation of Japanese chefs and the sophisticated spirit of omakase, where enchanting stories are told through the fresh, high-quality ingredients available in each meal. Some even liken teppanyaki to a feast for all the senses.

Indeed, stepping into the small, limited-seat table in front of the kitchen counter, diners enter an intimate dialogue where the language is not words, but dishes transformed by skillful artistry, amidst the pleasant sounds of constantly clattering spatulas and the changing temperatures, the sense of anticipation in the space, and the intoxicating aromas wafting through the air.

Behind the teppan counter at GAKU is a Japanese head chef trained to traditional standards. He not only masters every knife stroke, uses the spatula skillfully, controls the fire and smoke, but also knows exactly when the climax or turning point of the story is. A piece of Wagyu beef placed on the table at the right moment can make a diner's eyes light up. A small, precisely timed popping sound can create a stunning visual and olfactory effect. A moment of quiet anticipation before showing the diner the transformation of the dish can create a complete and satisfying dining experience. All of this is the result of thousands of hours of meticulous practice.

But what truly defines a master Teppan chef is not just their technique, but also their ability to "bear" the absolute trust of their customers. The art of serving in the omakase style means "entrusting." The chef must observe every action and facial expression of the guest to adjust the pace of the meal, choosing the right "characters"—the ingredients and dishes—to open, lead, and conclude the dinner in the most lively and captivating way. If the diner eats quickly, the chef needs to anticipate their next needs. If the diner enjoys the fish dish, the chef will consider what ingredient to use in the next dish to create a seamless transition. If the diner is already full, the final ingredients may need to be reduced to bring the dinner to a gentle conclusion...
At GAKU Teppanyaki, with the master chefs, every knife movement, every turn of the ingredients, every moment of interaction with diners is part of an unforgettable experience. It's not just the pinnacle of nonverbal communication, but also a way for the chef and customer to celebrate the present moment and cherish the best things in life.
The Art of Hospitality

If technique is the soul of Teppanyaki, then the ingredients are the materials that create that soul. At GAKU, the selection of ingredients is carried out with absolute rigor, starting from direct sourcing from Japan, to the processing before being served.
GAKU's Wagyu beef collection is selected from the most renowned beef-growing regions in Japan, such as Kyushu, Sendai, Kobe, Hida, and many others. Each cut of meat undergoes either dry-aging or wet-aging for 7 to 35 days to tenderize the meat fibers and enhance the natural depth of its umami flavor. This process is what creates the rich, layered flavors in GAKU's signature beef dishes.

Alongside Wagyu, the restaurant offers a selection of fresh seafood imported from prestigious fish markets and fishing grounds such as Miyagi, Hokkaido, Kyoto, and Ise-Shima. From sea urchin (uni), pen shell, and baby octopus (madako), to abalone, kanpachi fish, kinmedai fish, and Osetra caviar, GAKU is committed to using only the freshest and finest ingredients, carefully selected and packaged to ensure freshness, authenticity, and superior quality until each ingredient is served at the table.

It's noteworthy that GAKU doesn't build its menu solely around expensive ingredients. Instead, the restaurant advocates a diverse selection, incorporating ingredients from various seasons throughout the year. This approach not only reflects the Japanese spirit of seasonal cuisine but also adds depth to the culinary journeys at GAKU. Each time diners return, they are invited into a different, fresh taste story.
A meal at GAKU wouldn't be complete without a selection of drinks. The wine collection, with a focus on sake from rare brands like Dassai Beyond to Hakkaisan Snow-Aged, is meticulously curated. In addition, the premium wine list, featuring brands such as Dom Pérignon, Château Margaux, and Opus One, further enhances the dining experience. The pairing here isn't simply suggesting drinks to match the food; it's a carefully calculated experience designed to elevate the palate, harmonizing the umami flavors with the subtle tipsiness of the wine, creating a refined sensory experience throughout the menu.

Inspired by the spirit of 雅 (Ga) – grace and 玖 (Ku) – timeless beauty, GAKU restaurant expresses its unique identity through meticulously crafted details. Designed for discerning diners, the interior is designed like a cozy "theater," where "performances" unfold in a rhythmic sequence – from the sizzling on the hot grill, the rising steam and aroma of ingredients, to the calm yet controlled movements of the chef, all creating an unforgettable experience for customers.

As the resort's only teppanyaki restaurant, GAKU operates outside the conventional model, instead featuring two distinct spaces. The main area comprises two teppanyaki tables, each seating 6 to 8 guests. This allows for greater interaction between the chef and diners during the meal. Adjacent are two private rooms – ideal for intimate gatherings or special occasions – accommodating 6 to 10 people. The highlight of GAKU is the private dining room for 10 guests, where a handcrafted green marble countertop sits alongside high leather-upholstered chairs, creating a striking focal point. The entrance to this private room is behind a "path" of carefully selected wines and sake, further emphasizing the exclusive and luxurious feel of the exquisite dining experience.
GAKU Teppanyaki redefines the concept of fine dining through every detail. From the sophisticated ambiance, premium ingredients, dedicated spirit, meticulous preparation of each dish before presentation, and the ability to coordinate touchpoints in every moment,... all contribute to the restaurant's reputation. An art of hospitality, or a symbol of unique hospitality found only at GAKU Teppanyaki.
