It wouldn’t be Chinese New Year without it—tossing up thinly-sliced vegetables and raw fish with chopsticks, doused in oil, plum sauce, and peanuts while yelling well wishes at the top of your lungs. Yu sheng is a must-have ritual typically enjoyed in Singapore and Malaysia throughout Chinese New Year, and while every Chinese restaurant will offer a version of yu sheng that is largely faithful to the original, more adventurous epicures are on the hunt for more unorthodox renditions. Of course, there’s no shortage of those in Singapore, so whether you’re dining in or taking away for your home celebrations, here’s where to find unusual yu sheng platters to add some flair to your reunion dinner or other festivities.

1. Restaurant Jag

French flair is imbued in a classic Chinese tradition with Restaurant Jag’s special yu sheng, which is available for private dining room bookings from February 6 to 25. Only the freshest seasonal produce, like orange and black carrots and yellow and red beetroots, are presented for this special yu sheng platter, along with smoked Hokkaido scallop, marinated Japanese shrimp and cured Scottish salmon for a powerful burst of seafood flavour. 2. Canchita

There is a tradition of Cantonese and Peruvian fusion food (or Chifa cuisine) in Peru, and that is exactly what chefs and co-owners Daniel and Tamara Chavez are channeling this Chinese New Year. 3. Kinki Restaurant + Bar

Dried wakame (seaweed) and crab stick crisps stand in place of the traditional crackers for extra crunch, and when tossed in a truffle oil and sesame dressing, this could be one of the most flavourful and fragrant yu shengs you can find.

Crowned with gold flakes and dressed in soy sauce, lime juice and peanut oil, this is one yu sheng platter to remember.

From January 22 to February 22, you can indulge in the “Wafu” yu sheng, which comes packed with maguro, hamachi, salmon, yellowtail, tobiko and jellyfish. If that wasn’t enough, opt for the “Premium” yu sheng, which also includes lobster and uni, topped with silver and gold flakes for a touch of indulgence.

6. Level33

8. Si Chuan Dou Hua

Very rarely do you see fugu, or pufferfish, featured in an yu sheng platter. At Si Chuan Dou Hua, however, you can order yu sheng from January 8 to February 24, starring fugu from Shimonoseki, painstakingly prepared by licensed chefs in the region.
