It’s that time of the year again, when one of the world’s most prized delicacies comes back in season. White truffle is often found within the town of Alba in Piedmont, Italy, and is only available for a short time from late September to December, or early January at a stretch. Known for its notoriously difficult harvest and short shelf life, adding just a bit of white truffle imbues your dish with an insatiable fragrance—it’s no wonder the ingredient is so highly sought after. In this spirit, we’ve rounded up the best restaurants with special white truffle menus or dishes to get your fill of the delicacy this season.

1. Art di Daniele Sperindio

Indulge in the best Alba white truffles for a good cause at Art di Daniele Sperindio, which is partnering with Alba White Truffle World Auction to host the annual Alba White Truffle Benefit dinner in Singapore. On November 12, tuck into a five-course degustation menu curated by chef-owner Daniele Sperindio. You’ll indulge in delicacies like risotto with cured A5 Miyazaki Wagyu beef, and guinea fowl with smoked sardines and carrot bavarese— all generously showered with freshly-grated Alba truffle. All the proceeds from the auction and 40 per cent of dinner sales will go to the Singapore Children’s Society, so make sure to book your seats for this charitable cause.
2. La Dame de Pic, Raffles Singapore

Until the season ends sometime in December, you will be able to indulge in glorious white truffles from Alba at La Dame de Pic, Raffles Singapore. A minimum of 2 grams of Alba white truffle have to be ordered to enjoy them over select dishes such as the classic Berlingots pasta parcels, which feature in all La Dame de Pic restaurants worldwide.

3. Altro Zafferano

From now until the end of November, hint to your server at Altro Zafferano that you would like to try a white truffle speciality. You will be presented with an off-menu tagliolini, house-made with 32 egg yolks per kilogram of flour and decadently tossed in butter infused with alpine herbs. Piedmontese white truffle is generously shaved over the dish, lending a unique and complex aroma to the dish. Available as an à la carte item or as an additional course in its Experience menu, this dish is not to be missed.
4. Gunther’s
French favourite Gunther’s has introduced a special white truffle menu, where you can indulge in homely yet sophisticated plates uplifted by white truffle, including a grilled striploin with a shallot confit, and a warm tagliatelle with braised scallop. By far, the showstopper of the menu is the cold angel hair pasta, topped with Oscietra caviar and white truffle for a powerful flavour and aroma punch. Even coffee is not left untouched with a white truffle cappuccino, adding a lovely savouriness to the profile of your cuppa.
5. Buona Terra

One-Michelin-starred Buona Terra is honouring the gems of the season with a series of white truffle dishes, each created to bring out the fragrant aroma of this seasonal delicacy. Among them are the classic white truffle egg soufflé, infused with saffron and drizzled with parmesan cheese sauce, and a risotto cooked in a coffee applewood-smoked butter, that comes with a douse of anchovy sauce and white truffle for the ultimate umami. The tagliolini is a must-have, a simple dish made with a 36-month aged Parmigiano Reggiano sauce and topped with freshly-shaved white truffle.
6. Saint Pierre

Look out for the brown butter tart in Saint Pierre’s new vegetarian tasting menu. A mushroom-shallot duxelle and celeriac noodles doused in mushroom fills a brown butter puff pastry with a powerful umami. Generous shavings of Alba white truffle are then showered over the dish to finish. This is one dish that is not to be missed, so book your table at Saint Pierre before the season ends.
7. Braci

Available as a supplement in its five- or seven-course tasting menus, Braci’s dish for the season is tajarin pasta, made in an aged Parmigiano Reggiano fonduta (fondue) and soffrito jus. White truffle is then shaved over the pasta, making for a powerful yet balanced savouriness.
8. Butcher’s Block

Not missing out on the highly-anticipated white truffle season is Butcher’s Block, which has created a new dish of barley mushroom risotto cooked with a deeply savoury mushroom dashi. Maitake mushroom duxelles, white miso, and house-smoked butter amp up the umami factor, and with white truffle shavings and house-made crème fraîche, this is one creamy and irresistible dish to catch before the season ends.
If you prefer to enjoy your white truffles over your favourite existing dishes, you can opt to have them shaved over select courses in its newly-launched Imua lunch and dinner tasting menus and 3-course lunch menu.
