Savour Cantonese delicacies with Peach Garden’s CNY set menus, which come in seven and eight courses. Kick off the reunion dinner with the collagen yuzu yusheng, a stunning platter moulded into the shape of a xing shi (醒獅). It's crowned with baby abalone, salmon and collagen yuzu sauce ingots. Then, dig into an array of delightful mains such as the seafood pen cai bathed in a fragrant laksa broth; and beautifully fried glutinous rice with juicy Chinese sausage. 

You may also top up your meal with a la carte specialities, exclusively curated for the season. Dig into delicacies like the traditional roasted golden suckling pig and double-boiled mini buddha jump over the wall.

2. Hua Ting

Master chef Lap Fai’s set menus make for a simple yet hearty reunion dinner. Dig into Chinese New Year staples like the salmon roe yusheng that puts the spotlight on freshly sliced hamachi. Following the delectable starter is a parade of comforting dishes, among which are the double-boiled chicken soup filled with superior bird’s nest, sea whelk and antler fungus; and the Hua Ting Fortune Pot. The latter is a traditional pen cai dish that brims with 10-head abalone, dried scallop, South American sea cucumber, roasted duck, braised pork belly and dried oyster.

Fans of seafood can celebrate the arrival of the Lunar New Year with Jumbo Seafood’s reunion set menus. Its B10 eight-course set features delectable dishes that begins with the tossing of its signature salmon yusheng, packed with shredded vegetables, salmon slices and abalone. It’s followed by mouth-watering plates like the live lobster steamed with black garlic; refreshing fish maw soup with crab meat; and braised five-head abalone. Save room for dessert and delight in its glutinous rice balls encasing sweet lotus seed paste in red bean soup.

Executive Chinese chef Edward Chong is celebrating the Lunar New Year with a plethora of exclusive set menus. Perfect for the family is the Year of the Rabbit Imperial Set, comprising auspicious dishes like the applewood-smoked Jamon Iberico pork char siew; braised three-head abalone with fish maw; and sous vide lobster with yuzu somen. If you’re still feeling peckish, top up your meal with a la carte dishes, including the sweet Alaskan King crab with zucchini flower. The juicy crustacean comes bathed in a clean kombu dried scallop broth.

The Golden Treasures eight-course menu starts with the yellowtail fish yusheng; the signature prosperity salad brims with fresh yellowtail slices, fried vermicelli, shredded sweet potato and crispy shredded conpoy. The refreshing salad is followed by classic dishes like the roast crispy slice suckling pig; braised whole two-head abalone with seasonal vegetables; and stewed half lobster with noodles.

Chef Damian D’Silva and his team’s Lunar New Year a la carte menu lets you indulge in a wonderful selection of heritage fare this holiday season. A range of dishes await, among which are the braised pork knuckle, a classic Hokkien dish slow-cooked until it’s fork-tender. The dish is complete with the addition of dried oysters and dried black moss (fa choi), symbolising good luck and wealth. Another must-try is the red grouper—a symbol of prosperity, this fish is first partially steamed with young ginger and coriander before the addition of a silky soymilk egg mix. It’s finished with a classic Cantonese sauce of light soy sauce, crispy garlic, Shaoxing wine and coriander root.
