Chef Will Leung combines the finest local produce with the flair of landscape photography in this beautifully designed addition to the fine dining scene

Fine dining hotspot On Lan Street in Central sees the addition of another culinary destination this December as 1111 Ones Restaurant & Lounge opens its doors to the city's gastronomes.

Named after a number significant for its numerological allusions to new beginnings, 1111 Ones is designed by Myron Kwan, who previously trained under Joyce Wang and AB Concept. The interior takes ample inspiration from the water-carved passages of Arizona's Instagram-famous Antelope Canyon: a distinctive arched doorway welcomes diners into an open 2,400-square-foot restaurant space that echoes the flowing volumes and burnt sienna hues of the natural rock formation. Undulating lines define the main dining bar that borders the open kitchen, while copper accents, white marble surfaces, and muted textured upholstery only serve to drive the canyon parallels further.

The nature-as-inspiration angle continues in the kitchen, where chef Will Leung, previously of Gaddi's and Junon, tells the story of local ingredients while taking visual cues from a series of landscape photographs by award-winning lensman Kelvin Yuen, whose compositions have garnered acclaim for their depiction of desolate, ethereal terrains from around the world.

With six or eight-course tasting menus on offer (HK$1,288 and HK$1,588 respectively), highlights at 1111 Ones include the local chicken and oyster consommé with house-dried maitake mushrooms; locally-grown soft shell lobster confit with satsuma jelly and endives; and Black Angus beef with carrot jerky and milk tea carrot purée.

1111 Ones opens to the public for bookings from December 1, with its grand opening slated for December 8. It joins good company in fine dining, with the likes of Arcane, Mono, Ryota Kappou Modern and Zest by Konishi sharing the same address.
