The Japanese luxury spirits giant is partnering with these top bars to deliver innovative martinis made with Roku Gin and Haku Vodka this June

It’s the golden age of Hollywood. Sean Connery as James Bond wakes up on his nemesis Goldfinger’s plush private jet, dashingly handsome. He intones to the flight attendant in a deep baritone, “A martini, shaken, not stirred.” 

Thus immortalises the martini, one of the world’s most famous cocktails. At its essence, it’s a simple concoction of a white spirit (typically gin) and an aromatised wine (usually dry vermouth), but a mixture of vodka, sherry, or tequila will do the trick. The origin of the cocktail is shrouded in myth, though a popular claim points to a bartender in Martinez, California who combined sweetened gin and vermouth for the first time. Originally christened a “Martinez” in the late 19th century, the drink evolved over time to become the bracing, dry, ice-cold tipple it is today.

There are only two basic elements to a martini, so the quality of your spirits must be excellent. With Suntory, you won’t have to worry about a disappointing pour. Take its Roku Gin, which is beautifully floral and complex with the combination of Japanese botanicals like sakura flower, yuzu peel, and Sanshō pepper. At Gingerlily’s refined interiors at the Hilton Singapore Orchard, head bartender Michael Mendoza’s playful martinis may seem out of place. But don’t be fooled—though his ingredients are unexpected, they always have an eye on elegance and balance. Take the eclectic “Hi! Hello?!”, a conversation starter with Roku Gin, yuzu beer reduction, and topped with a sweet cicely garnish, which makes a simple and bright cocktail. Elsewhere, the Lady in Blue blends Haku Vodka, lychee and peach juice, Litchi Blue liqueur, Firewater Tincture bitter, and chrysanthemum flower for an electric blue martini with a powerful bite. For a cocktail with a kick, go for Mendoza’s version of an espresso martini, the “Maybe?”, which sees Roku Gin mixed with Bailey’s, espresso, strawberry oat, and rose buds for a subtle floral infusion.

2. Antidote

This upcoming World Martini Day, Antidote head mixologist Kingston Chin has come up with the Vesper Martini, combining Roku Gin and sakura green tea-infused Haku Vodka for a powerful, clean punch, sweetened slightly by shiso sakura vermouth, yuzu liqueur, and balanced by sancho bitters. If you’re looking for something more funky, the dirty martini is a more complex offering blending Haku Vodka with kombu sake, genmaicha-infused aged umeshu, olive brine, plum powder dust, and a seaweed chips garnish for a cocktail that’s just slightly umami and tart. Don’t miss out on Chin’s final offering, the Martinez, which is an homage to the original 19th century martini recipe. It sees Roku Gin with sweet vermouth, St George spiced pear brandy, orange bitters, torched rosemary, lemon twist, and a pickled Nashi pear garnish that stuns with its bloodred hue.

Acclaimed Japanese restaurant Akira Back is delivering martinis with a distinctly Japanese twist on June 17. The Meiryō Suru, for instance, is made by mixing Roku Gin, Nolly Prat-infused sencha, and yuzu. The grounded earthiness of the sencha is balanced by the acidity of the yuzu and the sweetness of the Nolly Prat vermouth, making a smooth drink that’s easy to drink. The Meiryō-Sa adds a little more character to the martini with the slight nuttiness of soy milk and melon, accompanied by Haku vodka, Nolly Prat, and citrus. For those who like it a little more bitter, go for the Furōrarumatīni, a concoction of Roku Gin, Amaro Nonino, elderflower, and orange bitters.

Sip on elegant martinis as you look over Singapore’s iconic skyline at Vue. The By the Bay is the perfect cocktail for the occasion, mixing Haku Vodka and Roku Gin with a homemade herbal brew and dry vermouth for an earthy yet floral profile. For a more fruity concoction, go for the Red Velvet instead, which sees Haku Vodka blended with velvet Falernum and homemade hibiscus and hawthorn syrup. But if you like your martinis to deliver a more of a tang, the Gherkin-tini is perfect with Roku Gin, Caperitif, and gherkin, which still delivers a clean, elegant tipple with a tart, briny taste.

An espresso martini is the perfect pick-me-up after a long day of shopping, balancing expertly the sharp bite of Haku Vodka with the bitter aroma of coffee liqueur and espresso and the sweetness of vanilla syrup. A lime drop martini is another alternative, mixing Roku Gin, lime juice, caramel syrup, and kaffir lime leaf for a citrus-forward tipple that’s dangerously easy to drink. But if you’re looking for something dry, look no further than the classic martini, which sees Roku Gin mixed with dry vermouth and briny olive juice for a clean and bracing drink.

6. The House Bar

The martinis are as simple as it gets at the House Bar, offering three versions of the classic cocktail that are respectful as they are creative. A Roku dry martini is a no-brainer, featuring Roku Gin and lemon, but swapping out the traditional vermouth for Cocchi Americano, a quinine-flavoured wine, for the sweetness. If not, try the Haku dirty martini instead, which retains the Cocchi Americano but uses Haku Vodka and olive instead for a brinier hit. But if you’re looking for something sweet and show-stopping, get the Raichi Martini, which sees Roku Gn mixed with lychee milk liqueur, lychee juice and Campari for the strong, tropical sweetness of lychee. Rosemary scented smoke completes the presentation with a touch of drama, making sure this is one cocktail you won’t forget.

7. Lumo

Things are getting interesting at Lumo, where it is presenting a lineup of martinis that challenge your palate with unexpected flavour combinations. The Rest of the Sense is one such martini, which is a concoction of Roku Gin, green chartreuse, Blo Nardini Grappa, Taylor’s Velvet Falernum, and whisky aged-barrel bitters for a complex, bittersweet tipple. The Courage, on the other hand, sees Haku Vodka mixed with wild turkey rye, Lillet Blanc, Benedictine DOM, and shisho bitters for a beautiful spice that lingers on the tongue. If not, go for the Clarity, which mixes Roku Gin, Dolin Genepi, St Germain elderflower, Clarin Communal, and olive brine. It’s the closest you can get to a classic martini with hints of florality and grass.

Tess Bar & Kitchen is offering a lineup of fruity martinis this World Martini Day for a refreshing tipple to beat the heat wave. Indulge first in the North Side, specially prepared with Roku Gin, poire pear purée, mint leaves, and lime juice for a cocktail that’s ever so sweet and enhanced by acidity. A glass rimmed with togarashi salt sharply elevates the entire experience. But if you’re looking for something with a bit more tang, the Plum Treasure is the martini for you, with its blend of Haku Vodka, umeshu, cherry blossom cordial, and rosé. Don’t forget the lemongrass gimlet, an homage to more local flavours with lemongrass cordial, St Germain elderflower liqueur, and Roku Gin brightened by a squeeze of lemon juice. It’s earthy, aromatic, and tart, perfect for loosening up after a long day.

Leave it to Catfish, chef Andrew Walsh’s innovative izakaya concept, to deliver unorthodox martinis that pack a powerful punch. The Haku Matchatini, for instance, takes Haku Vodka and mixes it with Galliano Ristretto, yoghurt liqueur, and matcha powder for an earthy, slightly umami tipple. The Haro is a refreshing offering, combining Roku Gin, Haku Vodka, Lilet Blanc, yuzu juice, and lemon peel for a gentle puckering acidity. But by far the most unusual martini on the lineup is the Salmon Saketini, which takes a fairly classic combination of Roku Gin and bianco vermouth and spikes it with Junmai sake and soy wasabi. True to Catfish’s dedication to seafood, fresh salmon is presented on a skewer, making this one unusually fishy martini.

By far the most unusual offering of all is the Wasabi-tini, a powerful concoction of Roku Gin, yuzu sake, wasabi, and jelly that will leave your senses tingling.

For a decidedly more acidic offering, go for the Marilyn, a tart concoction of Haku Vodka and tonka with passionfruit and lime, balanced by the aromatic essence of hazelnut. The best part? These martinis will be around from June 1 to 30, making World Martini Day a month-long celebration instead.
