Uncle Jeff Drinks’ Mamak, Bandung and Kopitiam kombucha will be available at In The Mood For Food
You may have tried kombucha, but have you ever tried air bandung or teh o ais limau-inspired flavours? At Tatler Dining's newest food festival, In The Mood For Food, you will have the chance to try Uncle Jeff Drinks’ Malaysia-inspired kombucha, created specially for the event. Founded by Jeff Lau during the pandemic, Uncle Jeff Drinks prides itself on using only tea leaves, fruits and spices with no artificial flavourings in its kombucha. Other than Lau's creative kombucha, expect to be blown away by beloved heritage dishes that have been reimagined into one-of-a-kind creations by eight celebrated restaurants.

Locally-sourced ingredients and flavours often make an appearance in Lau’s kombucha, which comes in flavours such as lychee, pineapple and lemon ginger. For In The Mood For Food, Lau has specially crafted three Malaysia-inspired kombucha flavours. “Usually we blend black and green tea for our kombucha, but for In The Mood For Food I wanted to give Tatler Dining’s guests a different experience, so I played with different kinds of tea.”
With tea playing a large role in Malaysian culture, Lau was inspired by the beverages locals enjoy at mamak stores, kopitiams and Chinese restaurants. "I calibrated three flavours of kombucha based on Malaysian food culture. First, the Mamak kombucha, made with black tea and calamansi, inspired by teh o ais limau."

His second kombucha flavour is based on air bandung, rose syrup milk. “The Bandung kombucha is made with green tea, rose and berries, which we use to bring out the natural pink hue. Bandung in Malay means to combine, so we pair combinations of teas and ingredients together to bring you the Bandung kombucha.”
The third creation is the Kopitiam kombucha, inspired by Lau’s fond memories of Chinese kopitiams he often visited as a child. “The Kopitiam kombucha is made with pu'er tea, tie guang ying tea and star fruit. When I was younger, star fruit juice was much more common in kopitiams, but nowadays it can hardly be found. Hopefully, the combination of Chinese tea and starfruit can bring back childhood memories.”
