Hong Kong is home to some excellent hotel bars that range from beloved institutions to modern takes on an age-old pastime: posting up at a bar stool, or settling into a plush banquette, to enjoy quality cocktails and hours of good conversation.

Every corner of The Aubrey is a cinematic moment, designed as much for savouring a stiff drink solo at the marble-topped bar as it is for an after-work unwinding over frosty highballs. Named as a homage to Kowloon’s moniker, Darkside feels little like an extension of Rosewood Hong Kong, with a character all of its own. While signature cocktails are updated roughly every year, classic cocktails such as the martini, Sidecar, and Jungle Bird are mainstays that you’ll want to come back for. DarkSide recently introduced its Yin and Yang menu, featuring eight cocktails which play on the ancient Chinese philosophy of these opposing yet interconnected forces.
The live band makes Darkside a place to linger rather than to stop by for just one or two drinks.

Lobster Bar feels like a throwback, with nary a sign of millennial pink or made-for-Instagram gimmicks. Instead, expect lacquered wood and leather seating, blue patterned wallpaper and stained glass, plus a terrace. The bar nails classics like a whisky sour and introduces distinctive specialities with unique and unexpected flavours; Calvados, horchata and umeshu have been known to show up in cocktails. Meanwhile, the wine list is far reaching, from Douro Valley to Ningxia.

Known as the highest bar in the world, Ozone has exceptional views and exotic cocktails in abundance. Head mixologist Bryan Benitez whips up a storm in his shaker with drinks inspired by the surrounding cityscape, as well as the five elements of feng shui. With a menu of international tapas, sushi and maki, and a Luminous Jungle Night Brunch from Tuesday through to Sunday, guests can expect stunning interiors, exciting entertainment and a unique experience any day of the week.

Named for the cockatoos that flit around the nearby park, this rooftop bar and lounge is the perfect spot for social butterflies. With the cityscape stretching out, punters come here for the creative cocktails—many with names inspired by the local flora and fauna—to be enjoyed al fresco. In cooler weather, this is one of the prime spots for a drink outdoors.

Located on the second floor of The Peninsula, The Bar whisks you away to a classic gentleman’s club. Whether it’s for after-work drinks or a meeting with clients, you’ll find the intimate venue quite soothing and comfortable. Whisky aficionados will be keen to peruse the broad list while listening to the talented pianist (who, it should be known, also takes requests). The Un-Aged Old Fashioned with white whisky is an experience in itself.
But if you prefer gin or vodka as a base, The Bar is also able to mix up a wide range of cocktails; the top-shelf quality of the spirits is best showcased in the gin- or vodka-based dry martinis. If you’re feeling a bit peckish, the snack menu certainly won’t leave you indifferent. The delicate portions go along quite nicely with pretty much any drink on the menu; for one, the ham and Gruyère sandwich is a real delight. The Bar doesn’t take reservations, but the team will try its best to accommodate you.

This hotel bar is a perfect escape from the city, thanks to an art deco-inspired design that blends St Regis’ New York charm with Hong Kong iconography. Similarly, the cocktail list is extensive, creative and delicious, paying homage to the history of Hong Kong’s tramlines and New York’s subway.
