If you’re one of the lucky ones, then the weekend is for loafing, boozing and falling into bed when the afternoon winds down. When else are you going to get the chance to stuff yourself silly with food and drink before retiring to a deep, long nap?
Instead of a rambling self-serve spread of too many things to eat, Skai’s Saturday Brunch provides an a la carte buffet of dishes like yellowfin tuna with avocado and spiced chickpeas, and steak and chips. We love that most of it is served fresh from the kitchen and in delicate portions. That way, if you like something, you can ask for seconds or fifths.
There are cold appetisers like wagyu tataki with pickled mushrooms and ponzu, mains such as caramelised pork belly with miso and eggplant, and a small spread of desserts, breads, seafood on ice, salads and smoked salmon. Look forward to a free flow of Taittinger Brut Reserve, wines, beers and cocktails like the Brunchin Spritz (a kaffir lime Aperol with bergamot puree and prosecco).

Chef de cuisine Howard Leong recently hit the refresh button on Edge’s Sunday brunch, but the spread is as lavish as ever.
Expect Alaskan king crabs, fine de Claire oysters and Boston lobsters on ice, as well as tempting Japanese nibbles such as takoyaki and crab and scallop chirashi. Heartier options abound: Angus beef flank, squid ink tagliolini with king crab, and Swiss raclette with all the traditional trimmings, among too many others to enumerate.
The Sunday Champagne Brunch happens from 12pm till 3.30pm (includes free flow of orange juice, iced lemon tea, coffee and tea) with the option of adding unlimited flow of Veuve Clicquot Brut Yellow Label Champagne, premium gin, cocktails and wines to your meal.
If you’re a fan of this waterfront seafood specialist, then its Weekend Champagne Brunch is the perfect excuse to let loose, order copious servings of its signature dishes (which are available as part of the a la carte buffet) and double down on the bubbly.
Nosh on favourites like the grilled barramundi, snapper pie and chilli crab linguine, along with a free flow of prosecco, house wines and non-alcoholic drinks. If yours is a preference for the French stuff, then go for the option with a free flow of Joseph Perrier Cuvée Royale Brut Champagne (instead of prosecco).

While away a Sunday afternoon eating cold seafood with your fingers, overdosing on caviar, nibbling on European cheeses, and taking in a kaleidoscope of pretty desserts. At this wonderfully spacious restaurant, the lavish Sunday Champagne Brunch also comes with a special selection of chef de cuisine Adrian Chan’s a la minute platters comprising the likes of duck confit, braised beef brisket and ratatouille that speak of his impeccable French training.
Taittinger Brut Champagne flows constantly between 12pm and 3pm, along with house wines, beers, soft drinks, juices and coffee and tea.
The selection of seafood here is reason enough to get out of bed on a Sunday morning. Wake the appetite with freshly shucked Taylor Pacific, fine de Claire and crueses de Bretagne oysters spiked with a sharp spritz of lemon juice, and dive into the sweet flesh of Alaskan king crabs and Boston lobsters.
Then mosey over to the Indian station where a whole spring lamb demands some of your precious stomach space. Also among the spread is an egg station that turns out oyster omelettes and shaved fresh black truffles over your oeufs.
The bounty of dainty desserts is bolstered by the delightful amaretto sabayon with red fruit compote that is doused in liquid nitrogen before it is served with chocolate or maple syrup, Chantilly cream and vanilla sauce.
If you have a brood in tow, there’s an interactive kid’s room where the young ones can busy themselves with activities like cookie decorating and Xbox games. It makes a good distraction as you take advantage of the unlimited flow of Ruinart "R de Ruinart" Brut Champagne, wines, cocktails, beers, juices and soft drinks. Six a la minute stations ensure an unending supply of delicious treats at the Hilton Singapore, like 14-hour slow-roasted Australian wagyu, waffles with crispy duck, king crab ravioli, and Japanese rice with slow-braised wagyu short ribs enriched with a runny onsen egg and fresh truffles. There’s also a seafood and oyster bar brimming with Maine lobsters, Alaskan king crabs and oysters from Canada, Ireland and France.
We always save space for the cheese room, which heaves with over 30 types of European cheeses, including a live Raclette station. And then there’s the six-metre-long dessert showcase at the hotels’ popular D9 Cakery (shout-out to fans of Hilton’s signature cheesecake) and the live grilled s’mores bar and gelato popsicle station.
Wash it all down with the free flow of Taittinger Champagne, beer, and red and white wines or the other option of free flow prosecco instead of champagne.

Leave the kids at home because this champagne brunch sited 57 floors up on the rooftop of Marina Bay Sand is a grown-ups-only kind of shindig. Live DJ sets accompany the free flow of Veuve Clicquot champagne, mimosas, Bloody Marys, Singapore Slings, wines, beers and non-alcoholic beverages.
To line your bellies is a spread of American and Irish oysters, shrimp cocktail, chilled snow crab and all sorts of canapes like tuna tartare with black olive vinaigrette. Heartier options include meatballs made with wagyu and Italian sausage, and wild mushroom frittata. Available every Sunday from 12pm till 3pm.
Apart from the free flow of wines and champagne, brunch-ers get their fill of libations like a 45-day barrel-aged Negroni at the Digestifs station. If that’s not enough, there’s also a DIY cocktail station where you can mix that Bloody Mary or G&T to your exacting taste.
There are food stations galore at La Brasserie, including a charcuterie one serving duck rillettes, country pates and terrines, as well as a cook-to-order station where you can get fresh servings of scrambled eggs with mushrooms and truffles, and forest mushroom risotto crowned with a flurry black truffle shavings. Save room for the dessert crepes, which are also made to order so they come to you like a warm and comforting hug to end your meal.
Available on Saturday and Sunday, from 12pm till 3pm (the Digestifs station is only available on Sundays).
Salted & Hung
Weekend brunch has always been a blast at this newly renovated contemporary Australian eatery. Guests can ask for unending servings of robust eats like bacon chop with rum-spiced pineapple, homemade sausages with mustard and kelp, and a three-cheese mac and cheese with beef crumbs.
Don’t miss the charcuterie bar lined with house-cured meats and the bacon ice cream sundae. Those who want a free flow of cocktails, sparkling and house pour wines can opt for it, but note that it is available for two hours only. Available on weekends, from 11.30am till 4pm.
Frankly, they had us at boozy milkshakes. Then they had us again when we actually got to the boozy milkshake station and found ourselves faced with a candy store-worthy selection of garnishes from chocolate chips to mini marshmallows and all manner of sweets in between.
Grab yourself a milkshake infused with rum or one of several maple-finished bourbons, then mosey around this feted bar for easy eats like slow-roasted Cajun lamb, fresh bagels with a bevy of schmears, freshly shucked oysters and Maine lobsters. There’s also a selection of craft cocktails, beers, wines, Bloody Marys that you can customise, and gin and tonics.
It’s enough to make you want to sink into Manhattan’s plush sofas and hibernate in its dark, loungey surrounds. Available on Sundays from 12pm till 3pm.
Sixteen theatre kitchens, 10 types of seafood on ice, 20 artisanal cheeses and a literal dessert extravaganza. It’s no wonder The Line is practically synonymous with sumptuous buffet lunches.
Graze through Indian, dim sum, carvery and Cantonese stations, on top of seafood on ice, kueh, cakes and a frozen yoghurt machine. There are even complimentary cupcake decorating classes and balloon sculpting for children, so parents can knock back the free flow of wines, beers and Veuve Clicquot champagne in relative calm.

There are worse ways to begin a weekend than with a couple of Gazpacho Oyster Shots, Grilled Cheese Toasties or Bacon & Eggs Fried Rice. These are but some of the lovely offerings on PS. Cafe’s newly minted weekend brunch menu (available from 9am till 4.30pm on Saturday and Sunday).
A free flow of wine, prosecco, cocktails and beer is also available. Otherwise, choose from the restaurant’s Spritz Collection, which includes creative concoctions like the Springtime Spritz with honeydew, prosecco, bergamot liquor and spring flowers.

No free flow of booze here, but judicious drinkers will appreciate the a la carte brunch cocktails at this New York-style steakhouse, which includes libations like the classic Bellini, available in peach, strawberry or mango flavours; the spicy Morning Glory infused with chilli vodka, lime and mustard; or summery sangrias and Aperol Spritz.
Start your weekend mornings right with the Steak and Eggs, a dry-aged striploin that comes with eggs done sunny side up or scrambled, or the Eggs Benedict with Petit Filet Mignon served over an English muffin. Purists can also order from the main menu instead.
The weekend brunch menu is available from 11am till 4.30pm on Saturday and Sunday.
