These turkeys make for great centrepieces for your Christmas dinners
Having the perfect turkey is essential when you are planning a Christmas feast at home. The good news is that you don’t have to make it yourself; trust the island’s top chefs to create an array of delicious versions that will make for a delicious centrepiece—whatever your spread’s theme is.
Although we are still a few weeks away from Christmas Day, it’s best to plan ahead and pre-order your turkey now to avoid disappointment. Here are some to get you started.

1. One Farrer Hotel

When: October 26 to December 25
Those with a penchant for local flavours can opt for this hotel’s smoky hoisin barbecue turkey. Marinated in a house-made hoisin sauce, roasted and smoked until aromatic, this bird is infused with all the fragrant and smoky flavours, and the meat falls off the bone.
Enjoy the creation encased in a thin momo dumpling wrapper, scallion and hoisin barbecue sauce. But, if you prefer the classic option, its signature salt-encrusted turkey is complete with chestnut stuffing, sauteed bacon-thyme potato and cranberry orange sauce.

2. Da Paolo Gastronomia

When: November 1 to December 31
Da Paolo Gastronomia’s latest festive offering is an easy-to-carve stuffed & deboned roast turkey, complete with three layers of stuffing. The Christmas bird is first filled with a Cotechino centre—a traditional Italian-style sausage made with pork meat, pork rind and lard. It’s then encased in a chestnut, leek and mushroom mix before it’s wrapped up in an aromatic chorizo spiced mince. Finally, the bird is roasted to achieve a moist flesh boasting a blend of flavours and textures. Balance these with its sweet and tangy house-made passion fruit sauce.
3. Goodwood Park Hotel

When: November 25, 2022 to January 2, 2023
This hotel’s yuletide offerings showcase classic holiday dishes with an Asian twist. Look out for its Chinese-style turkey marinated in an aromatic sauce infused with liquorice root, bay leaf, galangal root and star anise. Instead of roasting, the turkey is slow-braised for over an hour to enhance its rich and meaty taste. The creation is best savoured with a fragrant bowl of yam rice, braised eggs and chilli sauce.

4. The Dining Room

When: December 5 to 25
Adding spice to this year’s festivities is The Dining Room’s latest asam pedas roasted turkey. Bringing an Asian twist to the classic Christmas staple, the culinary team first gives the turkey a rub down in a spicy and tangy paste for over 36 hours before they slow roast it to a crispy golden brown finish. It’s served alongside nasi kunyit (turmeric basmati rice), sauteed Brussel sprouts mixed with sambal hijau (green chilli) and emping crackers (bitternut cracker).
5. Crowne Plaza Changi Airport

When: November 1 to December 22
Each year, Crowne Plaza gives the festive turkey an Asian refresh, and this year is no different. This year’s Asian rendition is made more flavourful with a honey-miso marinade; it is then brined for 24 hours and slow-roasted until the meat is moist and tender, and the skin a glorious brown. What’s more, it’s served with garlic soy fried rice, sauteed greens and a soy honey miso gravy.
The hotel’s traditional roast turkey is another sumptuous creation that is perfect for traditionalists. The poultry comes served with bread stuffing, roasted potatoes, cranberry sauce and giblet gravy.

6. Ryan's Grocery

When: December 1, 2022 to January 2, 2023
This grocer is celebrating the holidays with a range of traditional roasts, including the classic roasted turkey with stuffing. Its creation uses a GMO-free turkey fed with a 100 per cent vegetarian diet, resulting in a more flavourful bird. The bird is rubbed in a fragrant medley of herbs and spices before roasting to achieve fork-tender flesh and crackly golden brown skin. Have a bite and revel in juicy and meaty flavours that are further enhanced with the addition of sweet and tart cranberry sauce.
7. Little Farms Cafe

When: December 1, 2022, to January 2, 2023
Fit for a group of five to seven, Little Farms Café’s Christmas whole roasted turkey is prepared the traditional way—the 6kg bird is marinated in a mix of aromatic herbs and spices before roasted until succulent. Each turkey also comes with a sourdough apricot and sage stuffing, cranberry apple compote, and turkey gravy. If that’s not enough, top up with festive sides such as the cheesy cauliflower gratin, refreshing tomato and basil salad, and duck fat roasted potatoes.
8. Pan Pacific Marketplace

When: November 14 to December 26
Pan Pacific is making this festive period all the more indulgent with its classic turkey offering. The hotel’s rendition of the traditional bird comes rubbed in a special spice mix and stuffed with rich foie gras pate. Dig in and savour its beautifully crisp skin and succulent meat. Enjoy the bird with the accompanying sour cherry marmalade, wild mushroom sauce, and winter vegetables. For an even heartier affair, top up with festive sides like the creamy potato au gratin.
Not a fan of foie gras? Opt for the traditional roasted turkey that replaces foie gras pate stuffing with a buttery and nutty chestnut stuffing.
