The long-awaited hairy crab season has arrived. This luxurious crustacean is loved for its rich and creamy golden roe, and irresistibly sweet flesh. While traditionally steamed, various establishments have come up with innovative ways to serve this dish—this includes braising and stir-frying the flesh to enhance its sweet and meaty flavours.
If you are looking to indulge in these succulent crustaceans this season, here are some establishments to visit.

1. Shang Palace
The hairy crab is the star of Shang Palace's seasonal speciality six-course set menu, available until November 30. Indulge in exquisite new creations including braised inaniwa noodles with hairy crab roe and hairy crab oil, and braised shredded fish maw and Japanese pearl rice with hairy crab roe.
The feast does not end there. TRhe restaurant also offers an à la carte crab menu featuring braised diced beancurd with hair crab roe; deep-fried hairy crab shell filled with hairy crab roe; and hairy crab roe soup dumpling.

Diners can revel in this seasonal crustacean at Yì, thanks to chef Jereme Leung’s thoughtfully curated dishes whipped up using modern cooking techniques. Available throughout the month of November, his menu showcases freshly sourced crabs—the likes of Japanese king crabs, Sri Lankan yellow crabs and the prized hairy crab from the great Taihu Lake—cooked up in a variety of specialities. Must-tries include the freshly wrapped marinated hairy crab hand roll with Kristal caviar, steamed hair crab, and Suzhou style pork pastries with crab meat and roe.

3. Min Jiang

From October 29 to November 30, you'll be able to indulge in a variety of hairy crab specialities served in à la carte and set menus. Options for the aforementioned include the hairy crab trio—a feast of steamed ‘xiao long bao’ with hairy crab meat; deep-fried shelled prawn with mentaiko sauce; and crispy roasted pork belly—as well as the classic steamed hairy crab.
As for the set menus, you have two options: the Hairy Crab Bliss or the Hairy Crab Indulgence, both of which combine the restaurant's signatures and specialities. The first one features perennial favourites such as the traditionally steamed hairy crab, hot and sour soup, and fried rice with abalone and crab meat. The latter is an epicurean feast of steamed hairy crab with glutinous rice served in bamboo basket; pan-fried king prawn with minced garlic chilli sauce; and braised sea cucumber with mushrooms and broccoli.

4. Li Bai Cantonese Restaurant

From now until November 30, hairy crabs are the main stars of this stalwart Cantonese restaurant's menu. The culinary team has prepared five exquisite dishes; among the new creations, you have the braised garoupa roll with hairy crab meat and crab roe (which is presented like a rose); and the deep-fried crispy dumpling with hairy crab meat and crab roe.
Prefer the classics? Then go for the hearty and tasty crystal hor fun tossed with lobster, hairy crab and roe, and served in a claypot.
